I am back to making my girls' lunch boxes. Organic bread, organic spring salad, organic Ranch dressing, all natural uncured turkey, all natural pepper jack cheese and non-GMO popcorns. I can't stress that enough, homemade is the best food that you can give your body. I tried to cook more often as eating out can be costly and packed with GMO ingredients. It is hard to avoid GMO ingredients but I am trying to feed less of it to my kids. For the process food, I mostly buy the non-GMO and organic ones these days, but my girls still have access to the GMO chips at school. My girls are well informed believe me because I talk to them all the times but they don't have a choice when they are in school and were given the GMO snack. Unless they have the will power to say NO to snack that was given which is hard. Even I had a hard time to say NO to free food. We all have a choice and sometimes I do like to cheat. Cheat in moderation?? :P

Seaweed Rolled Eggs
I have learned this version of rolled eggs from watching a Korean variety show, "Dad, Where are you Going?". Haha...from now you have known that I watch quite a few of Korean variety shows right? It provided me with a good laugh and it was fun to watch. I liked those with kids, for example this and "The Return of Superman", it was just too cute!
Anyway, one of the dads cooked this for the kids and it looked good to me and what's best was it was very easy to make. Without hesitation, I made this for my girls and got their approval. Sometimes I made this for their lunch boxes, easy and nutritious! They loved to open it into a strip and eat it like that too. The eggs won't stick because of the seaweed.

Toast Pizza
I saw this Pizza using bread in someone blog before, but couldn't really remember where (Maybe Tigerfish?). I have also seen pizza using tortilla and pita bread. It just so many lazy and easy variation out there these days, and some even made dessert pizza. I made this for my girls' school lunchbox. I wanted to give them a different variety of lunch boxes instead of the same old thing. So, I toast it and make it looks like mini pizza instead of making it into a sandwich.
This was made in a different day without the spinach and cooked chicken breast. All packed in their lunch box. They preferred it this way instead of wrapping it in foil. I would add a cutie into their lunch box too.

Chicken Burger Sandwich Lunch Box
Homemade dairy-free bun with the same fillings, organic romaine lettuce, Whole Food all-natural rotisserie skinless chicken breast, natural cheese with ranch and Lingham's chili sauce or organic ketchup. Sides of fresh fruit and half an boiled egg. Sometimes instead of boiled egg, they would get a little snack like mooncake, homemade brownie, hawthorn flakes, homemade granola, one dark chocolate, etc.
Pre-wash your romaine lettuce and grapes the night before. So, on the day itself, you just need to assemble it. Quick and easy!
This is the lunchboxes I prepared for them this morning using the same nondairy buns but with added poppy seeds and rolled oats. I added pickled radish and carrot into their sandwiches too.
I loved this new BPA free lunchboxes that I got them. I wanted this so that it would sit nicely into their lunch bags, so that it won't be messy. With the double deckers, it can fill lots of food. Just that I don't think they can finish everything during their 10-15 minutes lunch time. I got them at TJMaxx if you are interested.

Kimbap Lunch Boxes
Showing another lunch box idea that can be made easily in the morning. Cook more rice the night before and keep it warm throughout the night (extended warm function in your rice cooker). Cut the carrot and celery into long strips (or cucumber) the night before and keep in air-tight container. Boil the eggs the night before as well and keep refrigerated.
So, on the next day, you just have to assemble it. No microwaving required and it keeps well at room temperature.

Lunch Box for Two
Oh ya...it finally came a time that I needed to prepare two lunch boxes. I was worrying because I hardly have any leftover these days as we all finished whatever I cooked for dinner, well mostly. They were growing up and started to eat more I guess. So, I was asking my elder girl, what should I prepare for you and your sister to bring to school if we don't have any leftover? She said we are fine with sandwiches, you can just make us sandwiches. I was like what kind of sandwiches, not peanut butter and jelly right? She said, lettuce with tuna. I was like okay. So, I went shopping for Rudi's organic bread, organic romaine lettuce, swiss cheese and a Whole Food's rotisserie chicken (as we don't eat deli meat). If no rotisserie chicken, I can fried an egg with some pork floss, or use the tuna pouch.
Their dad bought a case of yogurt drink without reading the ingredient list, thus the reason the frozen yogurt drinks are in their lunch boxes. We grew up drinking yogurt drink in Malaysia so it never occur to us that it is actually packed with high fructose corn syrup and all sort of other sugars (bad stuff!). Anyway, this frozen drink acted like a ice box for the sandwiches. And it melted into cold drink during their lunch time. Definitely not buying it again after we finish whatever we have left.
The verdict: Both of them loved it and kept asking me to make them sandwiches.

Samgak Kimbap Lunch Box
Samgak kimbap or triangle kimbap is the Korean version of rice balls. This is another easy to make lunch box idea for your kids at school. I used the same recipe as my post in making onigiri. You can either buy the samgak kimbap seaweed wrap (it came with seaweed in a plastic wrap with sticker) at the Korean store or supermarket (I read that 40 pieces is about $10+) or you can use the ordinary kimbap seaweed and do as what I did below to keep the seaweed dry and crisp (and save some money). My girl loves the extra hand on approach in wrapping the rice balls herself. It is like she makes it herself and showing off to her friends at the same time. :-)

Onigiri Lunch Box
This lunch box is super easy to make since most of us have some leftover rice in the refrigerator or from the night before. I stock up on pouch tuna when it goes on sales and that comes in handy. If you have these two main ingredients, you can make onigiri! Onigiri is Japanese rice balls and you can eat it with a piece of roasted seaweed too. Korean have their own version and it is called samgak kimbap (triangle rice balls) and it is wrapped in seaweed (will do a post on this later). Both of these make easy lunch box or picnic food and kids love them.

For me, making lunch box for my girl used to be saving money. But now it is to ensure that she gets a healthy and balance meal. She used to envy her classmates who get to eat in the cafeteria, but now she loves bringing her lunch box to school as her classmates would come and check on her lunch box (they are curious) and say things like it looks good, it smells great, oh are you eating spring rolls, that's the best thing ever, some even want to exchange her lunch box. She gets compliments on her lunch box and I guess that changed her attitude towards it. I do let her eat in the cafeteria when they are serving special meal such as Thanksgiving meal and Christmas special.

Vietnamese Shrimps Spring Rolls
I think I wrote about the Vietnamese spring rolls or summer rolls before but never really provided the method of making it. Since I make this quite often now and have been playing with variety of fillings, I am definitely getting better. I will show you a picture of my ingredients and guide you along in my next page (if you are a newbie of course). As for my ever popular peanut hoisin dipping sauce, you can get the recipe here. I have perfected the recipe, so you don't have to go else where for the recipe, just get it here!
This is definitely an appetizer or snack or lunch (it's great for picnic too) that you can make ahead of time. It also becomes one of the food that I prepare for Evy's school lunchbox. I cut the veggie, par-boil the vermicelli and shrimps and make the hoisin peanut sauce the night before. Then, on the next day, I just have to wrap it with a rice paper and enclose it with a cling wrap individually (so that it won't dry out and easier for her to eat) . I also pack a small container of peanut sauce for her to dip.

Brown Rice Kimbap/Gimbap (Korean Rice Rolls)
I am loving kimbap/gimbap because you can basically put everything you desired as fillings. I loved to make kimbap using my leftover turmeric barley brown rice (hence the yellow color) or brown rice . These days, I would keep some nori seaweed wrapper in my pantry so that when I feel like making some kimbap, I can. I made the above for my girl's school lunch, she loved eating it and there was no mess. I would make another for Edda as well when she comes home from school.
Close up of my fillings above: Fried eggs, imitation crab meat, spicy tuna, carrot, pickled radish and blanched bean sprouts (I wish I have some cucumber though for extra crunch). The filling is very versatile, if you can think it, you can make it. In fact, I like to make kimbap using leftover.
This would make a great picnic lunch as well. I can't wait for summer to arrive so that I can go picnic with my girls. Well, if the weather turns nice like in the 70s, that's a good reason to go picnic, doesn't have to wait until summer. :-P

Baked Turkey Meatballs
Do you love the convenience of frozen meatballs that sell in the supermarkets? I do! But as I am becoming more aware and more educated about food such as whole food vs processed food, I couldn't bring myself to buy it. As I flipped to the back and read the ingredients list, I had to sigh and put the frozen meatballs back in the freezer. I told myself, if I want some meatballs, I just have to make it myself and freeze it!
I chose turkey because I bought a small turkey breast during the Christmas sales. I removed the turkey bone and hand minced the turkey breast with a cleaver. Then, just added the seasonings and baked. Since my turkey breast was small, it didn't yield much meatballs, next time I would have to make more to freeze. These turkey meatballs were delicious as it. Or you can add it in spaghetti sauce, or make a BBQ meatballs sauce, or an Asian style sauce to coat the meatballs. I even sandwiched it in a bun with a slice of cheese for Evy to bring in as her lunchbox to school.

Lunch Box Save Money
With the bad economy today, we have to think of more way to save money. I have been preparing lunch box for my husband years ago. It started when we were trying to save money for our first house down payment. We were pretty poor at that time and those days were pretty trying as we couldn't go out and eat. I had to cook everyday and the most that we could do for eating out was to order from the fast food chains “A Dollar" menu special. We couldn't go shopping or spend unnecessarily and it was pretty tough. But we went through it and now my husband actually prefer to bring lunch box to his office. These days I figure most of the offices have a microwave for the employees. Thus, bringing a lunch box for lunch can really save you a lot of money. In addition to that, you know what you put in your lunch box and thus it is healthier compared to eating out. Furthermore, my husband dislike the food in the cafeteria and he actually like the lunch box I prepare for him.
As for the math, let's say if you go out for lunch, it will cost you at least $8 per lunch (drink, tax and tips included), but if you bring a lunch box to work, it will save you $40 for that week. And $160 per month, that's $1,920 per year. Not a bad idea huh?
Oh forgot to add, the above is my nasi lemak lunch box, yummy right? Share with you a tips of mine, normally I cook more for dinner and pack some for his lunch box the next day before we started eating. The next day, he just take it out from the refrigerator and put it in his lunch bag and off he goes. Easy, healthy, delicious and cost saving, you should try it!

My First Bento
Just sharing a bento I made recently. This was for myself as Evy doesn't eat much and her share couldn't fill the bento. LOL! Got this Hello Kitty box at Dollar Tree for $1, what a steal right?
I made rice mold for Evy too in her dinner plate and she totally loved it as well. She said, I want the carrot for the eyes too. LOL! Next time might have to use black sesame seeds cause the toasted sesame seeds didn't stand out.
