Homecooked meal

 


What can be more satisfying then a delicious homecooked meal made with love?  I love to provide my girls with a nutritional balance meal whenever I get the chance.  With the two air-fryers that I have, cooking a meal is so much easier and faster.  I air-fried the asparagus in one and air-fried the miso cod in another air-fryer and I time it so that both finish cooking at about the same time.  Here's how you get warm food and not one cold dish with your meal.  I also time the beancurd knots to hit start button on my air-fryers to cook.


Served it up with my turmeric, black pepper and coconut oil rice!  Yummy in the tummy every time!

Air Fried Baby Portabella Mushroom


Air fryer is a great kitchen gadget to have if you haven't owned it already.  I used it plenty often to produce an easy lunch or dinner.  It save me time and the food turned out great every time.  I would advice you to invest in one if you haven't already, or you can wait until Black Friday for the great price deal!

I wish I have asparagus, then I could throw that in and make it a more colorful and balance meal.

Air Fried Asparagus


Air-fry asparagus 400'F for 8 minutes.  Very easy and very delicious.  Spray with avocado oil and season with any spices to your liking or simply salt and pepper would do.  Enjoy!

Air-fried 5 Spice Tofu


This recipe popped into my mind while I was exercising on my stationary bike.  I know tofu takes the flavor of the marinade and I thought of an Asian style flavoring.  Like what if I marinate it with soy sauce and add 5 spice powder into it?  The other spices just came together while I was seasoning the tofu.

Did I mention how much I loved my air-fryer?  It just gave me so much more convenience when cooking the fried tofu.  I used to pan-fry the tofu in 2 batches and now I just threw it into the deep-fryer and it was done in 13 minutes.  How convenient is that?

Baked Crispy Potatoes


While I was browsing my Instagram, I saw a recipe of a delicious looking baked crispy potatoes that I wanted to try.  I used red potatoes and added Parmesan cheese to mine.  I paired it with baked Salmon and roasted asparagus and rainbow carrot to complete the meal.

This baked crispy potatoes was so crispy and delicious and my daughters couldn't stop raving about it and wanted me to make more.  I am going to make more for Christmas and this time pair it with brown butter chicken breast with mushrooms.  I am going to share my version of the crispy potatoes for my own record.  Try it and be amazed!

Stir-fried Spaghetti with Mushroom, Eggs and Flower Chives



How this dish came about was I couldn't resist purchasing the organic brown mushroom that was on Manager Special at King Sooper.  I still have half a bunch of flower chives that was given by a friend and some organic brown eggs in the refrigerator, so this dish was set.  Eating too much carbohydrate has gotten me fat but sometimes I just craved for this easy one dish meal.  It was filling and it took less time to make.  However, I realized that I couldn't eat too much carb. few days in a roll, I really put on weight as a result.  So, right now I would stick to as little carb as possible and consume more vegetable and some protein.  And if I can control no snacking in the afternoon that would be great but I love my cookies!!  :(

Divine Portobello Mushroom


I fell in love with the Portobello Mushroom years ago when I first tasted it.  Actually I am quite intrigue with the variety of mushrooms out there and would love to try as many different variety as I could.  I cooked this mushroom very easily.  First I made a sauce for the mushroom, this sauce consists of soy sauce, sugar, mirin, white pepper and chopped garlic.

Then, I sliced the mushroom into a long strips and put it on a preheated non-stick pan without any oil. You know the mushroom is cooked when it started to soften and released the flavorful earthy mushroom sense.  Turn it over to cook the other side.  Then, spread the prepared sauce on top.  Dish out and serve on a plate.  Enjoy this flavorful treat!

Korean Rice Cake Soup


My original plan was to make a seaweed tofu miso soup with added Korean fish cake.  And then I remembered I still have half a packet of the fresh rice cake in the refrigerator and then the AHA moment, why not I just mixed it in together with the soup?  Now I had a one dish meal ready to consume hot in this cold weather day and I didn't have to worry about cooking the rice.  This makes one excellent meatless meal as well.

The fresh rice cake is good in stir-fry, spicy with gochujang or non-spicy with soy sauce and so good in soup too, so remember to grab a packet of this whenever you are in a Korean supermarket, it can certainly comes in handy.

Caution:  Don't overcook the rice cake, otherwise it won't be chewy anymore, it will expand and become soft.

Hijiki Seaweed Cold Side


I have to eat seaweed regularly to keep my Hypothyroidism under control.  2-3 times a week is sufficient for me.  The most regular seaweed that I consume is wakame, cook in miso tofu soup.  I also add wakame when I prepare my kimchi ramen, any chance I have for seaweed, I would use it.  When I am too lazy to make the miso soup, I will switch to Hijiki seaweed since this can be prepared pretty easily.  Right now, I would do a blood test once a year when I visit my OB/GYN to see if there is any changes.  I noticed that if the reason of your hypothyroidism is the lack of iodine, you can easily modify your diet to keep it under control.  For me,  the regular consumption of seaweed really helped.  It might not be for everyone but it works for me.

Baby Bok Choy Kimchi


When I went to a Korean BBQ buffet, there was one vegetable kimchi that I really liked and that was bok choy kimchi.  I was surprised at how good it tasted and I always want to make it in the back of my mind. This is a short cut version as no glutinous rice paste was used as well as no food processor.  So, no onion, no apple and no pear.  As you know, I am famous for the short-cut version.  However, adding fruit and onion would provide additional sweetness to the dish.  I heard that the glutinous rice paste is to give the kimchi extra shine.  Anyway, I am too lazy to make those today so I am settle with this.


Verdict:  I would try adding an apple or sweet pear next time.  I bet it would taste better with the additional sweetness from the fruit.  I would probably use 1 Tbsp. of fish sauce first and if it is not salty enough, at least you can add more and season to taste.  Otherwise, if it is too salty, then it would be harder to adjust, just have to eat it with lots of rice.

Easy Stir-fried Celery


This dish was created because I needed a vegetable side dish for my Korean dinner and my refrigerator only had an organic celery and a tiny bit of cabbage.  So, I picked up the celery, thinly sliced it and started working through the recipe while stir-frying it and doing the taste test.  I added black sesame seeds for the color contrast and the celery was crunchy.  I am quite happy with the result and would certainly make this when I am out of other green vegetable again!

Mexican Squash Pancake (Jeon)


When I starts, I couldn't stop!  I have been cooking tons of Korean side dishes lately and I have no idea what's gotten into me.  I made this to bring to a Korean friend's house and just so happen that she was making the exact same thing!!  Down to the same Mexican squash!!  Talk about coincident as zucchini pancake is more common.  I bought this because I have no idea whether the store that sells the zucchini is GMO or non-GMO unless I buy organic, so I picked Mexican squash instead.  I couldn't tell the difference between these two anyway except one is dark green in color.  This is one popular Korean side dish and serve on special festivals.  It is not hard to make at all just the pan-frying part is a bit troublesome.  We all loved this so next time I would have to train my Evy to make this!

Korean Style Cold Tofu Banchan


There is a reason why I like to eat at a Korean restaurant, I will get to sample their banchan/ side dishes and then discover new banchan to cook at home.  There are some Korean restaurants that serve up non-traditional banchan that use mayonnaise, fruit salad and salad.  But I like the traditional banchan more especially those that I am not familiar with.  I find it great to sample food that I have never eaten before from another culture.  My husband is the least adventurous of all as he won't touch some of the banchan such as kimchi.  Luckily I have exposed my girls to kimchi early on and they all love kimchi now and three of us will finish the kimchi in the restaurant.


This spicy cold tofu dish is the replica of what I had recently.  I am not sure whether this is the right way of doing it but this is my way of making it and I think it turned out pretty good.  I think it make a quick and easy banchan.  My hubby didn't like it, he didn't even want to try it at first but took a tiny bite after I asked him. Oh well... more for me then!

Stir-Fried Arugula


Since I was introduced to arugula by mistake a while back, we learned that we actually like this veggie, even my girls liked it (even though it is slightly bitter and lemony). However, this veggie can be kind of fibrous, so I like to cut each leaf into half before stir-frying.  We really loved the Spicy and Sweet Tuna Arugula Pasta and I hope you will get a chance to try it too.  Because my girls like it so organic arugula has been in my vegetable rotation for my family.  I have since added organic arugula and organic baby kale into our vegetables of choice.  I tried to incorporate as much variety of vegetable and fruit into our diet each week as possible.  Sharing with you this easy stir-fried arugula recipe!

Salted Chicken Egg Steamed Eggs


I made some salted chicken eggs a while back and I had no idea what to do with it.  Haha... you could say that was why I never bother to make my own or even buy salted eggs before.  But since I decided to make some the other day and my family members do not like to eat porridge, so there is no way that I can serve it with porridge.  I didn't want to waste the salted eggs so I made this!    It was so simple and blend well with the steamed eggs and not too salty at all.  I didn't season the beaten eggs for this reason.  Those tiny black dots were white pepper in case you were wondering.  I also added it in fried eggs, like a salted eggs fried eggs and my girls said it was good as well.

Pan-fried Tofu with Broccoli


I was trying on a new sauce called "Wan Ja Shan- Stir Fry Sauce" and I wanted to share it with you all.  It made this stir-fry dish delicious and I only used this sauce alone without any other seasonings.  You can make it into a one dish meal by adding some meat or poultry and serve it with a hot bowl of rice.  Or serve it vegetarian by adding some mushroom with a bowl of hot rice.  You should be able to find this sauce in the Asian supermarket.  You don't have to add a lot, just 1 Tbsp. should be enough for a whole dish.

Bitter Gourd with Eggs


Bitter food is healthy food especially bitter gourd.  If your body feels heaty, bitter gourd will be recommended to you because it is a very cooling food.  But because it is bitter, I hardly ever buy it because my husband is a picky eater and I am not sure how well it will fair with my girls.

One day, while I was shopping at the Asian supermarket, the bitter gourd that I saw just looked so fresh and inviting that it was calling me to pick it up.  A Chinese chef that I knew told me to pick bitter gourd that has wide ridges, then it won't be that bitter.  I also sprinkled it with sea salt, hoping that some bitterness would come out as well.  Additionally, I took the safer route to fry it with eggs as my husband and girls all loved eggs, and would probably eat anything that contains eggs.

The result:  They all finished it.  My girls did complain that it is bitter, but I told them that's why it is good for you and eat them up and so they did.  Maybe I should also blanch it first to make it even less bitter?

How to eat Nagaimo? 怎么吃山药?


Nagaimo as it is called in Japanese or  huái shān (淮山) or shān yào (山药) as in Chinese is a nutrient rich tuber/ root vegetable that is loaded with health benefits.  山药 literally translates to "mountain medicine" and has been used in traditional Chinese medicine long time ago.  You can read more about nagaimo and the nutrition facts here.  The Taiwanese cooking show that I mentioned before introduced me to this way of eating the nagaimo.  It is so easy to prepare and I just need to pound it and mix in with my rice or noodle, so why not?  You can buy the fresh nagaimo at the Asian supermarket.  It is not very cheap but not too expensive either.  Since I am the only one who eats this in my family, I usually buy a small piece, the above picture is 1/3 of what I bought.  I cut about 1/3 of the tuber, wash it and peel it (be careful as it is very slippery, it might cause itching if you are sensitive but you can soak it in vinegar water first), then cut it into smaller pieces and place it in a Ziploc bag and pound it with the back of a cleaver or an empty bottle until mushy like picture shown above.

Slow Cooker Spiced Cauliflower


My second dish using a slow cooker (not counting soup and dessert).  While typing this post, I realize that I can actually add garbanzo beans.  Oh well, will sure to remember it the next time I make this.  Just add 1 can of garbanzo beans (drain) into the mixture if you like (to make it a one dish meal).  Since the day I made this was Monday, so it was a meatless Monday dish for us.  I am trying to cook more meatless meal again (need to lose some extra weight!) since I have not been too discipline lately.  We really enjoy this easy vegetarian dish and hope you like it too!

Vietnamese Shrimps Spring Rolls


I think I wrote about the Vietnamese spring rolls or summer rolls before but never really provided the method of making it.  Since I make this quite often now and have been playing with variety of fillings, I am definitely getting better.  I will show you a picture of my ingredients and guide you along in my next page (if you are a newbie of course).  As for my ever popular peanut hoisin dipping sauce, you can get the recipe here.  I have perfected the recipe, so you don't have to go else where for the recipe, just get it here!


This is definitely an appetizer or snack or lunch (it's great for picnic too) that you can make ahead of time.  It also becomes one of the food that I prepare for Evy's school lunchbox.  I cut the veggie, par-boil the vermicelli and shrimps and make the hoisin peanut sauce the night before.  Then, on the next day, I just have to wrap it with a rice paper and enclose it with a cling wrap individually (so that it won't dry out and easier for her to eat) .  I also pack a small container of peanut sauce for her to dip.
