Baked Crispy Potatoes


While I was browsing my Instagram, I saw a recipe of a delicious looking baked crispy potatoes that I wanted to try.  I used red potatoes and added Parmesan cheese to mine.  I paired it with baked Salmon and roasted asparagus and rainbow carrot to complete the meal.

This baked crispy potatoes was so crispy and delicious and my daughters couldn't stop raving about it and wanted me to make more.  I am going to make more for Christmas and this time pair it with brown butter chicken breast with mushrooms.  I am going to share my version of the crispy potatoes for my own record.  Try it and be amazed!

Pan-fried Salmon in Special Sauce


This was just a regular salmon dish at my house, except I was trying on a new sauce.  Because the sauce was sweet, slight hint of sour and savory, I didn't bother to season my salmon.  I didn't flour it either just to cut down on the refined flour intake.  When you flour your meat, poultry, seafood to deep-fry or when you add cornstarch/potato starch to thicken the soup/sauce, do you know that you are actually adding refined processed white flour into your diet?  You probably didn't know right?   I didn't notice this small little detail until I heard it from a healthy eating guru in some healthy Chinese cooking show.  It made me aware of this fact, with the knowledge, I would try to cut down on it as much as possible.  It was hard as lots of Chinese dishes need the thickening starches to make a dish palatable.  Just look at my sauce above, it would certainly look more appetizing if the sauce is thick instead of watery.  Also, the fact that all of the egg drops soup and hot and sour soup in the Chinese restaurants are laden with thickening starches, it does make me think twice when ordering it.  Wonton soup is definitely a better option I guess.

Now you are aware, it's up to you to make the right choices!  Again, moderation is the key!

Sweet and Sour Salmon Fish


This is a remake recipe of my recipe here.  While trying to think of a different way to serve my salmon, I remembered I once cooked a sweet and sour sauce that I liked.  When I went to look for the recipe, alas!  it was without any measurement!!  Now I know it must be hard for beginner to create a sauce based on the ingredients listed.  So, I wrote it down for you and also for myself (convenient) and my girls (they won't know how much soy sauce to add or how much sugar or vinegar to put, etc. to create a sweet and sour sauce!).  Anyway, I measured the amount, pen it down and tried it myself and we all loved it, it turned out delicious so I shared it here with my readers.

Believe it or not, I frequently came to my own blog to look for my old recipes that I have forgotten (old age?).  I have created lots of recipes over the years and I am actually glad that I documented them in this blog which I can always come back and refer to, even when I am in another country or someone else kitchen.

Easy Oven Baked Spiced Salmon (易烤香料三文鱼)

 
This is one super duper easy oven baked salmon dish.  Even a busy working mom can easily make this at home.  Just thaw the frozen salmon overnight in the fridge and when you come home, the salmon is ready for you to use.  To create a balance meal, buy some washed and cut broccoli, green bean, cauliflower, baby carrot and mushroom, season with extra virgin olive oil and a little salt and put it in the oven to bake together with the salmon (for the harder to cook veggie, just microwave for 2 minutes before roasting).  Serve it with store-bought Hawaiian sweet buns (or whole wheat buns) and you have a complete meal.

I served this salmon with turmeric brown rice, stir fried pumpkin and crimini mushrooms.  Both my girls praised this baked spiced salmon and Evy even requested to save some for her lunch box the next day at school.   Guess I will make this often from now on.

Pan-Fried Lemon Pepper Salmon


I have not pan-fry salmon for ages.  I always took the least time consuming method by baking it in the oven.  After a while, I guess I miss the crispy crust of pan-frying salmon.  This salmon dish is super duper easy especially if you already have the McCormick Lemon & Pepper seasoning salt in your cupboard.  I saw this seasoning in my pantry and realized that I hardly used this seasoning.  So, I took it out to be used in my salmon.  The salmon fillets that I bought was without skin.  So, in order to get the crispy crust that I was looking for, I patted both sides of my salmon with cornstarch.  And this got the job done.  I served it up with my Asian style stir-fried broccoli.  Or you can do my American style microwave butter broccoli, even easier.

Salmon with DOM


I  have been cooking a lot of salmon recently, guess you have been noticing it too.  Salmon is rich in omega 3 fatty acid and thus a brain booster.  Supposed to be good for your brain.  So, I came out with this recipe with what I had in my refrigerator at that time.  The soup of this dish was really fragrant with the smell of DOM, so good drizzle with rice.  It made a good one dish meal too!

Oven Steamed Tom Yam Salmon


I loved to use my oven to steam fish.  It was fast and cleaning up was easy.  That's why I named my fish oven steamed tom yam salmon.  I always oven steamed my fish with Teriyaki sauce, miso paste, Chinese soy sauce,  yellow bean paste and I wanted a change.  I was getting bored with the same old way of steaming fish after a while.  And I thought I could try it with Tom Yam paste, but not just the paste alone as I wanted some kick.  So, I added an extra sauce in there to make it better.  Read more to find out.

I likes this as it was a little spicy, a little sour and went really well with rice.  Took less than 15 minutes and you would have a delicious dinner waiting for you.

Salmon Noodle Soup




















This noodle soup is almost identical to my Chicken Shells Soup.  The only different is salmon was used and I added red bell peppers.  This is the first time I used salmon in soup and I was impressed at how well it hold it's shape and tastes really good.  Now I have new way of cooking salmon as this gives me an idea of creating other soupy salmon dishes.

I really loved these two types of noodle soup, of course you can use other kind of dried pasta that you have at home.  You can easily cook a big pot and enjoy it for days.  Give it a try and feedback to me ya!

Salmon with Ginger Salted Bean Sauce



This dish is so good. Definitely saving it to make my salmon dish in the future. The sauce is slightly on the salty side, so remember to eat it with lots of rice. You can probably dilute the sauce with some water, but I like my sauce thick. You don't have to season the salmon at all. Just enjoy the salmon with this thick and yummy sauce is enough to make you clean your rice bowl at no time. This is one of my experiments in the kitchen that turned out superb. Now I am a converted salmon fan (but I only like WalMart wild salmon)! What an opposite to people who dislike WalMart wild salmon eh?

Salmon with Ginger Slices



Salmon is rich in omega 3 fatty acid and is one of the fishes recommended for heart healthy diet. My husband and I are not a fan of salmon. Often time I eat salmon is due to the fact that it is rich in omega 3, that's the only reason that I would eat it. Another reason is salmon is not cheap at all, especially wild salmon. I don't really like the farm raised salmon mainly because coloring is added to make it looks pink, not to elaborate about the farming of salmon and the condition the salmon were in before it has been packaged. But, I found that you can actually buy affordable wild salmon at Walmart. I bought One lb (16oz) of individually vacuum sealed fillets, wild caught, all natural salmon for only $3.50 (about 4 fillets) on sales, usual price is $3.95. And the whole half size of the wild salmon for only $7+, that's affordable to me. So, I got tempted just because it's high in omega 3 fish oil. I want to balance this fish with the Tilapia fillet that we liked. When I bought this, my hubby actually said who wants to eat this yucky fish. *roll eyes*
