Since I was introduced to arugula by mistake a while back, we learned that we actually like this veggie, even my girls liked it (even though it is slightly bitter and lemony). However, this veggie can be kind of fibrous, so I like to cut each leaf into half before stir-frying. We really loved the Spicy and Sweet Tuna Arugula Pasta and I hope you will get a chance to try it too. Because my girls like it so organic arugula has been in my vegetable rotation for my family. I have since added organic arugula and organic baby kale into our vegetables of choice. I tried to incorporate as much variety of vegetable and fruit into our diet each week as possible. Sharing with you this easy stir-fried arugula recipe!
Ingredients:
1 bunch of organic arugula, cut off the root, soak in salt/vinegar water for 15 minutes. Wash the veggie and rinse under running water in a colander until clean. Take a bunch and give it two/three cut to make it into smaller pieces, finish the rest.
3-4 garlic gloves, minced
Sprinkle of red pepper flakes (just a little would do, about 1/2 tsp.)
Olive oil to cook
Sea salt to taste
A touch of white pepper
Method:
Heat up your wok, when hot, add in the olive oil. Then, add in the garlic and red pepper flakes, stir-fry until slightly yellow, add in the cut arugula. Quickly stir-fry it, add a little water to soften. Season to taste with sea salt. Turn off the heat and add a touch of white pepper. Serve hot on a plate.

Good that your girls enjoy arugula cos arugula can be quite bitter (and peppery)! I like to include a variety of veggies in my cooking as well but then found myself going back to the same kind of veggies e.g. kale, cauliflower, cabbage, spinach, broccoli.
Wow, arugula can be stir fried. I believe it is good, just like fried lettuce! Got to try it.
Wow. Arugula looks very similar to spinach. Never tried it but it looks like a nice and simple recipe to make.
I like this veggie!! It's really tasty and I like the way you just cook it; stir-fry as nothing beats that simple yet flavorful way of enjoying the vegetable! :-)

Sounds delicious! I'll give this a try, as I love stir-fried spinach, kale and other greens.
this is new to me, but I am think I will love it as it looks so leafy.
Stir fried added w/ EVOO, a splash of Asian vinegar 1 tsp of honey and pine nuts. Delish!!
