Swirl Green Tea Vanilla Pound Cake




I have a block of cream cheese sitting in the refrigerator so I had to find a recipe for it.  I remembered I once made a orange cream cheese pound cake that was really good.  I should have follow that recipe with I adapted instead of trying this new recipe at allrecipes.com.  It is still good but it was not as good as it could be as I have tasted better.  I was kind of disappointed.  Next time I will use the recipe in my blog for cream cheese pound cake instead of trying another recipe.


I added green tea powder for the middle layer.  Next time I probably make it all green tea flavor as this high quality matcha powder is really fragrant.  I took half to my work place and they all loved it. It felt great to share your food to someones who appreciated it.  :)

Chocolate Cream Cheese Pound Cake


I wanted to buy some cocoa powder but some how when I was in the supermarket, it just slip my mind.  So, I had to pen it down and reminded both of my girls to remind me to buy some cocoa powder when we are in the supermarket again.  I wanted to buy some Talentie's gelato that was on sale in Albertson so I told my girls, lets go look for the cocoa powder.  The Everyday Essential brand of cocoa powder was on clearance for $1.72 and the original price is only $1.99! I was like no way, why is it so cheap compared to Hershey's brand??  I checked the ingredient list and it said 100% cocoa powder.  Checked the ingredient list on Hershey's and it said cocoa powder.  So, I grabbed the last two cocoa powders that were on clearance.  Didn't know I had been paying so much extra for cocoa powder until now.  Now I know where I would go for cocoa powder when I am out again!

I loved this cream cheese pound cake recipe and wanted to create a chocolate version out of it and here it is!  This pound cake is not very sweet, I would say mild in sweetness as I reduce the sweetness in this.  If you like a sweet cake just use 2 cups of sugar.   This cake is a must-try because oh it's so good!

Cream Cheese Chicken Pasta


My quick way of disposing the cream cheese, use it to make cheesy pasta!  Or to make cream cheese chicken soup (old recipe back in 2008) or cream cheese pound cake (2009).  I got to admit, this cheesy pasta is a bit dry, so make sure you don't over-cook the pasta like me until most of the almond milk was evaporated.  Take it out when it's still wet.  Or just add more almond milk or milk (your choice).  Edda loved it and requested to finish the leftover.  Of course I warmed the leftover pasta on the stove in a saucepan and added more almond milk to make it creamy for her.  She said it was delicious!  I have 4 more ounce of cream cheese, more cheesy pasta or cream cheese pound cake to make....hmmm...

Blueberry Cream Cheese Pound Cake



6 oz. fresh blueberry was on sales for $1 again. I bought 5 because my girls loved it. Decided to take 3oz and put it in my favorite cream cheese pound cake and the resulted cake was heavenly. I truly love this cake, you gotta try it if you haven't already. It should do well with other berries as well such as raspberry, blackberry and strawberries.

Cream Cheese Pound Cake



Awesomely delicious!

Ingredients:

1/2 cup (1 stick) butter, softened
3/4 cup sugar
1/2 pkg. (4 oz) Philadelphia cream cheese, softened
3 eggs
1 tsp. pure vanilla extract
1 cup flour (all purpose, unbleached)
1/2 Tbp. baking powder
1/2 tsp. salt

Method:

1. Preheat oven to 350ºF. Beat butter in large bowl with electric mixer on medium speed 1 min. Gradually add sugar, beating well after each addition, until very light and fluffy. Add cream cheese; beat 1 min. Add eggs, one at a time, beating well after each addition. Add vanilla extract, beat to mix.

2. Combine flour, baking powder and salt. Add to butter mixture. Beat 1 min or until well blended. Pour batter into greased and floured 8 1/2 x 3 1/2 loaf pan and bake for 40 minutes. Stick with toothpick to check for doneness.

Edda's Birthday Party (Part 1)

My little girl turned one year old few days ago. I had a birthday party for her because turning one is special for Chinese. So, I invited a couple of my friends to celebrate with us. Sharing some pictures of what I cooked with my readers here.

I learned a lesson from Evy's birthday. That is not to wait until the last minute to stir-fry because I was still cooking when my guests showed up and I had to finish cooking and setting the table in front of my guests. So, for this I told myself I got to get everything done before my guests arrived. So this time, I got everything cooked two hours prior and keep warm in my oven ready to bring out 5 minutes before the designated time. However, I also learned a new lesson with this arrangement, will spill in my part 2 post when I show the close up of my dishes.

Orange Cream Cheese Pound Cake


As you can tell, I am loving cream cheese pound cake! I adapted this recipe from lemon pound cake. I don't have any orange at home and thus the use of extract. But it would certainly fragrant packed with added orange zest. Not that this is not fragrant, but I like the burst of flavor when I bite into the zest. ;)

Green Tea Pound Cake



I made a marbled green tea pound cake to a friend's house recently and Evy loved it. And since I have all the ingredients at home, I made another one for her but this time I made it all green tea. This recipe was adapted from Kraftfood~ Grandma's Pound Cake; and definitely a keeper recipe for me. It is just as good without changing anything in the recipe, the pure vanilla extract itself made the cake Mmm..so good.
