Sesame Wheat Cookies



I saw this cookie posted in auntie Yochana's blog and quickly asked her for the recipe. It looks very good eh? I was delighted when she posted the recipe and I have all the ingredients on hands. So, waited no further, I made her sesame wheat cookies.



You can get auntie Yochana's recipe here. I'm not sure how to describe this cookie. It's neither sweet nor salty. Kind of light and "song song" ( pronounce in Hokkein) with butter and sesame seeds flavors. I think it is suitable to serve this as cookie for cream cheese spread or jam. We just eat it like this though and surprisingly both my girls like it. I gave a bottle away to my friend and the rest my girls finished it in two days!

By the way, I baked mine in 325'F for 20 minutes.

Green Tea Oats Cookies




I was browsing through food blogs and then some and then I felt my hands itchy again. Itch to have some action and then my mind started to wander. I wanted to make something very easy without taking out my electric beaters and incorporating green tea powder (as I love it) and sort of healthy at the same time and thus this was created.

If you like crunchy oats cookies with green tea fragrant, this is the recipe for you. I used this Oats Cookies but instead of vanilla extract, I used 1/2 tsp. of green tea powder, omitted the raisins and choc. chips and used 1 cup of oats instead.



The resulted cookies of the day! The color and shape of this cookie seem to me very suitable to serve on Halloween. :P I can imagine adding two tiny choc. chips as eyes and I will have myself a plate of little green goblins starring at me. LOL! Surprisingly, this cookie was well received by my hubby and two girls.

Addictive Chocolate Clusters



If you want a quick and easy yummilicious little snack for your afternoon tea, this is it! So easy to prepare and yet so satisfying and scarily additive. You will gain pounds with this cookie if you don't have self-control, so beware! ;o) This chocolate clusters is chocolaty, crunchy from the cornflakes and slight chewiness from the raisins with hint of peanut butter. Mmm...Mmm...so good!

Baked Pork Floss Mini Puffs




I saw the mini peanut puffs at Lily's blog and it gave me an inspiration to make mini pork floss puffs. Reason being I have a bottle sitting in my pantry ready to be used. Since I have no plan on making any deep-fried CNY cookies this year, I decided to experiment with the basic pie crust recipe for my baked puffs. The resulted pastry is buttery, crispy and flaky!

Green Bean Almond Cookies



My first CNY bakes after much procrastination. I bought a packet of green bean flour thinking of using it to make some cookies for CNY. Did a search on the Internet and found this recipe here. Easy enough for my liking and thus got the recipe printed out to try later. After seeing few of my frequent blogs came out with their CNY bakes, I finally got motivated to start baking. LeeLee (Hugbear) said once my engine starts, I will keep going...hahaha...



This cookie is crunchy and melt in the mouth. It has the green bean fragrant as the almond is used for decoration only. Next time I would probably omit the almond, shape the cookie differently and make it a green bean cookie instead. Evy and Edda both adore this cookies as they couldn't resist themselves to ask for it everyday. Evy prefers it without the almond on top as she would pick it aside.

I sure think I made pretty and yummy CNY cookies, anyone wants to buy from me (provided you are willing to pay $12-$16 per bottle plus shipping)? LOL!

Cornflakes Cookies



I finally test out this cookie by baking a batch since this is one of the cookies I wanted to make for CNY. Glad to say I like it and it's so easy to make too. I used the small cookie scoop to scoop the cookies and hence the even shape. This way I don't even have to dirty my hands.

Christmas Cookies


Butter cookies

Made some cookies as a gift and these were some of them. You can use a basic butter cookie dough , add peanut butter chips for color effect. And below, I added green coloring and pure peppermint extract for the season. As for me I used my melting moment recipe, added more flour and make it into a crispy cookies. All with the feel by hands, so don't ask me for recipe ya. But you can certainly experiment with it. I did this few years back with the same recipe and I played around with it and created 5 different cookies.

Only when I wanted to make Christmas cookies did I realize that I don't even have a Christmas tree, snowflake and ginger breadman cookie cutters! Guess now I will have to look for those to buy when it's on sales or cheap to keep for next year! I really thought I have this common cookie cutters! *Duh right?*

Orange Mixed Berries Pistachio Biscotti



I love my biscotti flavored with orange zest or lemon zest. It seem to bring out the flavor more and make it really tasty. You can eat it just like that because it's so flavorful.

Chocolate Chips Raisins Oats Cookies



Once I start, I couldn't stop! This recipe is so easy and so versatile that I just love to play with it. Help! So many combination and so many way to use this basic cookie dough to create whatever cookie you can think of (all sort of nuts, variety of chips, dried fruit, there is no limit!). And I haven't even started with cornflakes yet!!

Mixed Golden Raisins & Cherries Oats Cookies



I love oatmeal cookies but I never attempted to bake my own oatmeal cookies because oats in any kind was just not in my shopping list. Then, I came across oats on-sales again and thought why not, at least I can bake some cookies or use it in butter oats prawns, also oats is good for us, so why not? Hence, I bought some old fashioned rolled oats.

I saw this Rolled Oats Cookies recipe at CookBake Legacy and decided to give it a try. I modified it a little to suit what I have in the house, such as I used canola oil and added 1/2 cup of mixed dried golden raisins and cherries. The result is definitely yummy! This cookie is crunchy in itself and the dried fruit gave it an extra chewiness when you bite into it. I totally love it! I will try it with cornflakes next!



When cooled on wire rack, store it in an air-tight container. This recipe is definitely a keeper, good for Chinese New Year and it's so easy to make and so addictive (I couldn't stop eating!). This is also one recipe that I can play with. Thanks Chawanmushi for sharing the recipe! :) Oh, it yields 38 cookies for me.

Wife Cake (Lao Por Bing)/(Lor Por Peng)



Lily gave me two to try on Edda's birthday and I guess I'm too "thiam jiak" and two was not enough and thus I decided to look into Florence's recipe (she included step-by-step pictures), which was the recipe Lily used. I realized I actually have all the necessary ingredients and thus my hands started to itch again, or my mouth being "thiam jiak". LOL! So, I made it!!


I did some modification because I don't use shortening in my household. I used spreadable butter in the water dough and filling and I used 45g canola oil in the oil dough. This recipe yields 12 small wife cakes.


A closer view. This pastry is supposed to be soft and flaky but I like it crispy and flaky like on the day it was baked. Look at all the crumbs when I cut it open in half, so crispy and flaky! This pastry turns soft the next day so if you like it crispy, finish it on the day it is baked. But, if you like the original soft pastry just keep it til the next day. However, if you like me who couldn't finish all in a day, you get to enjoy both texture. *wink*

Verdict:
I love it! Even though this is the first time I tasted this kind of filling. I think in Malaysia we made the filling differently and also called it a wife cake. Click here to view. Almond Flavored Sugee Cookies



I was just playing or experimenting with my cookies. Instead of the vanilla extract, I used almond extract instead. The cookies turned out great, just as yummy. Guess this is a short-cut way for those of us who don't have ground almond on hands. I saw one sugi cookie recipe that uses ground almond, so I experiment with almond extract. I wonder why they called it sugi cookie instead of almond cookie when ground almond is used? Any idea?

Finally I made Jo's peanut cookies that I have been eyeing since last year! The original recipe can be found at IK (under cookies/biscuit section). I only did 1/4 of the recipe because I only have 80g of ground peanuts at home. So, I testing out this recipe earlier preparing for the CNY ahead.

Pusiva's Tutti-Frutti Cookies



I made Puspha's Tutti-Frutti for Christmas. First, I was sucked in by the beautiful colors of the cookie. Then, the easy recipe convinced me to try this.

The verdict? I simply lovvvvveeee it!! It's crunchy with a little chew from the mixed fruit. A little on the sweet side, but hey it's a cookie right? :P This will be another keeper recipe for me. Will make this cookie again during Chinese New Year if I have time (or if my daughters allow me, haha...).

Pineapple Tarts



It is still too early for pineapple tarts isn't it? But I made some for my mom to try since I was still able to do some baking while my mom was here. You can find my recipe here. I was trying with some new cookie cutters that I bought in Malaysia and man...were it hard to use. Finally managed to find one that was easy enough to use (shown above), guess will have to shop for more design the next time I go back. This is one cookie that takes a lot of time to make and can finish in a day!



I also made some kuih bangkit for her to bring home for my sister who loves this cookie. I tried it with the pincher and it turned out prettier than the plain cut out one I did before.

Step-by-Step Kuih Bangkit Guide

I didn't know that so many people have problem with making kuih bangkit. Thus, I decided to make mine again with step-by-step pictures guide. I followed my recipe to the T and got no problem at all. No need to add more flour or more coconut milk. And it's all done in exactly 15 mins (baked time). Only the seashell mould ones needed 20 minutes.

Place the tapioca flour on top of the paper towel and in a microwave safe bowl and microwave for 1 minute, stirred. Set aside and let cool.


Measured all the ingredients ready before adding into the flour. I put the yolk into the melted butter and gave it a quick stir before adding it into the flour.


This is the thick coconut milk that I used. It's a coconut cream, very fragrant and more expensive but nothing can beat this brand. My kitchen smelled so nice while baking my kuih bangkit.


This is how the dough looks like after kneading.


Roll it on a lightly flour surface to the thinness you like. Flour the rolling pin as well.


Dip the cutter into the flour and then cut it, give it a twist and pop it on top of lined parchment paper cookie sheet.

Baked in preheated 350'F oven for 15 mins.


Cool on wire rack.


I made 4 sea shells one from using the mould for experiment (on the left). This one are thicker, need 20 mins baking time.


I bite one into half, trying to let you see what the inside looks like. Too bad, my camera cannot zoom in too much and this is the best I can do.


Remember to line your cookie sheet with parchment paper, if not you would get this. The kuih bangkit would stick and there's no way to get it out unbroken. See, what my laziness cost me! Haha...

Kuih Bangkit


I love kuih bangkit and was so happy to have found the recipe at KC, generously shared by Leelee (Hugbear). However, I just realized that I have accidently changed her recipe by converted it to cups by using my lousy conversion table. I also modified some of her steps to suit my lazy lifestyle. Thus, my kuih bangkit is crispy when you bite into it and then simply melt-in-your-mouth. No wonder her kuih bangkit looks so different from mine! Now I will never know how hers tasted like.

Cookies...Cookies...

Ahhhh....is the season to make some cookies! I have a tea party on Dec. 17th (today) which gave me an excuse to make some cookies, or play with the dough. :P I actually had a few patterns that I wanted to try out, but it didn't turn out so well as I was using the melting moment recipe (added more flour to make it crunchy). The dough was still too soft to shape! Thus got to make do with my last minute patterns, whichever works!
