Strawberry Chiffon Cake - Part 2
Simple decoration as Evy requested, strawberry and sprinkles. My strawberry chiffon cake recipe can be viewed here.
Yummilicious!! Oh yeah, I didn't do a party for her this year, just made her a cake and took her out for lunch at her favorite locale.
You all really need to try this cake, it turned out to be so delectable, my hubby just couldn't stop at a slice! This is also the only cake thus far that he ate till the last slice. Next time I would make three layers so that I could have more strawberries bites. Simply YUMMY!! The chiffon cake is soft and light and the whipped cream is a perfect match with strawberry, I just love this cake! Can you tell how I adore this cake? :P
My Whipped Cream Frosting Recipe:
1 1/2 cup whipped cream
1/4 cup icing sugar
~Beat until soft peak is formed.
For middle layering:
Take some of the whipped cream and mixed in with some chopped strawberries.
Note:
The amount of whipped cream just enough to cover the cake, not enough for fancy decoration on top of the cake. You need to use 2 cups of whipped cream for extra decoration.

Well, I'm one who likes chiffon cake but don't really like strawberry-flavored anything other than eating the fruit itself. Maybe I got scared after drinking too much strawberry milk when I was still young and in school!
But can see your cake looks soft and fluffy, just the way I like chiffon cake!

This is such a party cake with the rainbow sprinkles! Evy must be over the moon :) Maybe you could cut the strawberries garnish into half instead of quarters? I think they will look neater and more symmetrical compared to smaller pieces. And also more strawberries to eat, hehe ;) I'm really impressed with the cake!

Thanks Tigerfish. Oh I know how that can be. I used to drink Soysilk soy milk when pregnant with Evy and now I want to vomit by just looking at it. LOL!
Hi Daphne, I think it can but I just never try it before. You can experiment and let us all know. :P One more thing, you might need a few pans because this cake is huge and rises high.

Thanks Joanna. For my method, you just made sure you hold the cake securely. I hold the cake up slightly bent at the sink and started to sprinkles and turned around until all sides were covered. Most of the sprinkles will fall on the cake, but some will fall in the sink. ;)

Thanks Nilmandra. Actually I only had 1 lb. of strawberries and I needed some for the puree, some for the chopped out and a few for Evy while making the cake, so not much left to decorate the cake. LOL!

When I try to put strawberries and mangoes in the middle and on the cake the juice from the fruit comes out of the cake and ends up in puddles down the sides of the cake, how do you do it? Do you have to soak the fruit in paper towels first?

Hmmm...I didn't dry the fruit first. I just cut and then mixed it with the whipped cream. My whipped cream is pretty solid and can hold the chopped strawberries in place. You have to put this in the refrigerator because the whipped cream can melt.
hi there! this is my second time to do this and im very very happy to say that it never failed me :) i just put a bit of strawberry essence to the frosting so it would be a true blue strawberry cake hehehe! thanks so much for your bravery in experimenting :) im planning to try your pandan with yogurt cupcakes soon :)
