Once I start, I couldn't stop! This recipe is so easy and so versatile that I just love to play with it. Help! So many combination and so many way to use this basic cookie dough to create whatever cookie you can think of (all sort of nuts, variety of chips, dried fruit, there is no limit!). And I haven't even started with cornflakes yet!!
I would also like to thanks Gina, the recipe originator for sharing this easy and yummy cookies in her forum. And thanks chawanmushi for posting it in her blog because I missed it at Gina's forum.
(A)
1 egg, beaten
1/2 cup canola oil
1/2 tsp. vanilla extract (optional)
1/4 cup + 1/8 cup of sugar
(B)
1 1/4 cup self-raising/rising flour or (1 1/4 cup all-purpose flour + 1.5 tsp. baking powder)
1/2 cup old fashioned oats
1/2 cup semi-sweet chocolate chips
1/2 cup raisins
Method:
1. Mix (A) in a bowl. Add in (B). Mix well.
2. Use your hands, roll and press into balls. Place on baking sheet lined with parchment paper.
3. Bake at preheated 350'F oven for 13-15 minutes. Or baked in preheated 325'F convection oven for 13 minutes.
4. Let cool in pan for 5 minutes before transferring it to cool completely on a wire rack. Store in air-tight container.
To me, this is a fool proof recipe, just mixed and baked and I don't see where it could go wrong with any non-baker.

I was busy baking over the weekend too. Saw the recipe from Cuisine Asia ... I added Cream Cheese to mine (had some leftover) ... came out really good too!!!
My hubby took some to work. Heard it was gone within minutes!!!

Yes, I noticed that these days, a lot of people added cream cheese in their cookie dough too. I wanted to try a cookie recipe with cream cheese too.

I tried this recipe this morning. Exactly like u described - I love these crunchy n very addictive cookies. I did some subs - I used melted butter ( more calories :( but I love the butter fragrance ) and dried cranberries n added another 1/2 cup oats cos i love oats.

I tried making these cookies last night and I noticed that it was very oily at the dough stage. When I rolled them into balls for baking, oil leaked out too. I had to add in more flour to make it more manageable. I am just wondering if the oily dough is to be expected? Thanks for your thoughts.

Yes, my dough was oily too. Perhaps when I made the conversion into cups, it was slightly off. You can always refer to the original recipe that uses grams measurement. Or you can add a little flour or more oats into the dough to make it more manageable like you did before.

I had tried this recipe and the cookies are great! However the inner part is not baked well and looked wet. So i extend the baking time and it came out slightly burnt. Can you give me some advices on this?

Hi Elaine,
Was your cookie very big? Try to make it smaller the next time. If not, just keep watch when you increase the baking time. Take it out before it's burnt.

All sugar in my blog is white sugar. If it is brown sugar I would state it. Just like all my egg is large egg.
