Flaky Pie Crust

This is for Gert. I adapted this recipe from I love this basic pie crust recipe and has been using it for all my homemade pies. I even used it to bake curry and pork floss puffs. For the above chicken pot pie, I used two pie crusts.

Ingredients: (yield one 9 inch pie crust)
1 1/4 cups all-purpose flour
1/4 teaspoon salt
1/2 cup butter, cold, cubed
3-5 tablespoons ice water

1. In a food processor, add in the flour, salt and cubed cold butter. Pulse a couple of times.

2. Add in Tbsp. of cold water while pulsing at the top opening until a dough is formed.

3. Turn the dough on a plastic wrap, wrap well and refrigerate until ready to use.

Hi Ching,

Welcome home and Happy Mother's day 2u. I'm a new fan of ur blog fr Pg and hope to learn more tips fr u...hehe.

Btw hw do u make d lattice? Any gadgets for it?

Anonymous said...

Hi again,

What do u mean by using 2 pie crust for your pot pie? Does it mean double the portion of ingredients, laying one layer at the base too?

Sorry, one more question, how long you need to bake the pie and at what temperature. Hope I don't irritate you with so many questions.

You're welcome Beachlover. It's so easy with a food processor and thus I love to make my own.

Hi Janz, thank you and glad to hear you like my blog. There is no gadget for my lattice. It's made by hands. How to make it it's hard to explain. Sort of like overlap it on the countertop and then move it on the pie and then cut off the excess.

Yes, for this it's double the recipe, one for the bottom and one for the top.

How long to bake the pie is depended on what filling you put inside. For this, it's a chicken pot pie and it is baked at 375'F for 45 mins. Just look at my Pies under LABELS for more links.

Thx for your prompt reply and the answers to my questions. Yeah, I fully understand now.Guessed I must have missed out the part as you did mention in your other post that you made the lattice by hand....hehe!

Since you are back in Msia, any plans of coming over to Penang? No worries I can be your local tour guide!!! Let me know, ya?

Hi Janice,
Sorry for the late reply. I only saw the last question just now. We have no plan to go to Penang, timing is toooo tight! It will be great to have a tour guide. We hardly know our way here anymore, so many new buildings and everything just look so different.

I am trying to make some quiches, and wanted to try your recipe for the crust.

If I dun use a food processor, can i use the mixer instead?

ps, hope the little ones are better and you rested well. Pls take care.

Little Corner of Mine said...

Hi Ning's Mummy,
Can your mixer handle dough and come with a dough hook? If yes, it should be fine. Not so sure though. The other conventional method is to use hand.

Thanks, i'll give it a try and let you know ;)

What is brand of your processor ?
Are you referring to the expensive ones like few hundred dollars ?
I have one cost less then $100 SIN. But I used it on mixing butter and not dough.

Hi Anon,

The brand of my food processor is Cuisinart. Not really that expansive, about US$80.
