Clear my fridge time! I need to clear my cilantro which I bought two weeks ago. The best way I know how is to make pesto out of it. I have been making cilantro pesto instead of basil pesto for years. Reason is very simple, I always buy cilantro and hardly ever buy basil. My cilantro pesto consisted of cilantro, garlic, walnut, olive oil and season to taste with salt, black pepper and sugar. We love it!
I stir-fried some sliced fresh button mushroom in olive oil until soften. Added carrots and the leftover chicken breast meats from KFC and stir in the spaghetti and toasted well with my pesto and dinner was ready.

Cilantro pesto.. great idea, C. It can be made ahead and stored and used later, ya?
Btw, happy 10 yr wedding anniversary to you and hubby!
ooo. i like the use of leftovers in this dish. Where's my fork?
I want someeeeeeeeeee, please :)
this is a beautiful idea, i love cilantro, and i can totally try this! cool! hehe
Next to tomato-based pasta sauce, pesto is another pasta sauce I like. If I ever make pesto again, I'll try cilantro. That time I made mine, I use pistachios!
what a delicious way to empty your fridge!! the photo looks awesomely delicious!!!
Simple and yummy!! I used to hate cilantro but since coming here I learned to eat it and now is my fav herb :)
Thank you Louisa. Yes, you can put it in the fridge for up to three days or store in the freezer for much later. :)
Thanks daphne. *Passing her a fork* ;)
Thanks D!
*Passing Indo-Eats another fork* ;)
Thanks Rita. Try it when you have lots of cilantro and don't know what to do with it. ;)
Tigerfish, me too! But I like Alfredo sauce too. :P
Thanks Dhanggit. :)
Thanks Gert. I always loved cilantro, so fragrant.
Looks really yummy and a good way to use up leftovers. Thanks for another new way to serve pasta.
Another tasty leftovers meal! Thumbs up :)
Yummmmm love your ideas for using up leftovers and whipping it into another yum meal. I'm like that too but am still green at it. Do you mind if i create a link to your blog though my blog's pretty new still?
Thanks mommy-monster! Thanks for stopping by.
Thanks Nilmandra.

Hi LCOM,
My hubby loves Pesto. While browsing your blog I came to notice that you actually make your own pesto sauce. Do you mind to share with me how to make the Cilantro Pesto, I wish I can impress him.
Thank you.
Jacqueline
Hi Jacqueline,
I don't have the exact measurement so it's all rough estimate of how I did mine, ok?
In a food processor, add in a bunch of lightly chopped cilantro, 3-4 cloves of garlic, about 1/2 cup of toasted walnuts, pulse a min, add in olive oil and pulse until the pesto consistency you like. Season to taste with salt, black pepper and a little sugar. I didn't add Parmesan cheese so that I could keep the leftover in the fridge. You can add the cheese if your hubby like it.
Hi LCOM,
Thank you very much for your reply. I will try it out and surprise him this weekend.
You are the greatest.
Warmest regards,
Jacqueline
