Good Old Bowl of Chili



I decided to make a pot of Chili today. It's non-traditional but very easy to make. I don't have a specific measurement simply because I hate to take out the spoon to measure everything. I used pork slices instead of ground pork/beef. Again too lazy to ground the pork with my cleaver. Why Chili? Because it's freezing cold over here and I'm dreaming of a bowl of hot Chili!



First, I browned the pork in extra virgin olive oil. Dish out and set aside. Then, I add in one chopped yellow onion and 2 cloves of chopped garlic. Brown those in the E.V. olive oil, when brown, I pour in 28oz. of whole tomatoes with juice (break it out) and 15oz. of red beans in Chili, add in the pork slices and some water. The seasonings I used were garlic powder, onion powder, cumin powder, paprika powder, cayenne powder, oregano, parsley, a little cane sugar, salt & pepper to taste. Covered and let it simmer at low heat for 2 hours. Serve with shredded cheese and rice on the side.

Note: Add 2 cans of red beans in Chili or any beans you fancy if you like lots of beans.

hmmmm...look good...I never eat Chillie b4..Mostly what they sell in Wendy,come wt beef,so I never taste it at all..but hubby and Mishu love it

Chili is so comforting, isn't it? I like to add corn to mine. I also add some different kind of beans - usually a mixture of kidney beans, garbanzo beans, and black beans.

Yes, it's comforting and I so love your idea of adding corn! Will add corn the next time and variety of beans. When I was shopping for beans, I froze because there were so many beans and I had no idea which one to buy so I picked the easiest red bean in Chili. LOL!

No idea if we can get Jim Willie konnyaku jelly powder, never heard of this brand before. It's hard to find konnyaku jelly powder here, almost nonexistence. But I manage to find one online store that carries Konnyaku powder and molds. Link below:

Yeah, will be good with corn chips, next time will have to grab a pack of chips too! :)

Thanks Ling. Since we cook it ourselves, can basically put anything we desired and make it our own, sliced chicken breast would be an healtier version huh?

Yes Gert! Never made corn bread before, don't know how to make also, you got one good recipe? I like the sweet and spicy corn bread that has the added corns and bell peppers & jelepeno, you got the recipe?

Wah, must be so appetizing with rice in freezing weather! Can use as filling of chili pot pie (just don't scoop out too much gravy so that the pie does not get too wet). Thinking only...wonder if it works!

this is what i needed too in a cold and cloudy weather here...i prefer your version of pork rather than ground meat..with a hot steam rice..what could i ask for more..nothing except that i hope tomorrow will have a better weather!!
