Spicy Kimchi Soup with Dumplings and Veggie



I cooked this on a cold snowy day.  I couldn't think of a better way to warm up our bodies but a hot and spicy kimchi soup!  Of course just a kimchi soup was not enough, it got to pack with the other healthy ingredients to make it a one dish soup.  Serve well with rice.  And for the leftover soup, add in some sweet potato starch noodle noodle to make it into another meal!




Ingredients:

Make a Hot Paste:
4 cloves of garlic, minced
2 Tbsp. gochujang paste
2 Tbsp. Korean chili flakes
1 Tbsp. mirin

1 Tbsp. organic chicken base
1/2 cup kimchi
1/2 block of soft tofu, cut in chunk
6-8 baby portabello muchroom, cut into half
1 bowl of washed bean sprouts
1 bowl of washed baby bok choy
1 organic carrot, sliced
8 Ling Ling's frozen potstickers (or homemade dumplings)

Method:

In a electric pot, add in water to your liking, or enough to cover all the ingredients.  Add in chicken base, the hot paste and kimchi.  Let it boil.  When boiling, add in the dumplings, carrot, mushroom and let it simmer for 15 minutes.  Lastly, add in the tofu and veggie and let it simmer for 5 minutes. Before serving add in the chopped green onion.  Serve with coconut oil cooked rice!  Enjoy!

This is really good for the cold weather. I have been trying to make such one-pot soups too.
