Thanksgiving Meal 2019


Our mini Thanksgiving meal.  My girls and I just loved the green bean casserole so we had to cook it again and this time we paired it with slow cooker turkey (I overcooked it and it turned out a bit dry and then I burnt it while I set it on broil!!! *slap face*), gravy and air-fried sweet potato tots.


Luckily my girls still like the turkey and said it was fine with the gravy.  Well, I did learn a lesson with each failure, don't ever trust the recipe completely and always check half way for sure.


My sweet potato pie from scratch!  I just can't do without it every holiday season.  A must have for my girls and I and in addition to that we also added the apple crumble pie into our tradition.  Those pies are so good homemade from scratch and it is just irresistible for us.

Turkey Meatballs Spaghetti


An easy dinner with the baked turkey meatballs that I made earlier.  I liked the whole wheat angel hair pasta because it cooked fairly quickly.  Since this was a quick and easy dinner, I used the Target brand traditional spaghetti sauce, added some chopped red onion and button mushrooms and lastly some spinach to make it more nutrition.


If you look closely, you can see a dollop amount of red chili paste on top of my pasta.  That was my extremely spicy chili paste (that's why a small amount was sufficient) to increase the appetite of this dish.  If you haven't tried eating it this way, try it next time, it's really delicious (given that you can take the heat to begin with).

Baked Turkey Meatballs


Do you love the convenience of frozen meatballs that sell in the supermarkets?  I do!  But as I am becoming more aware and more educated about food such as whole food vs processed food, I couldn't bring myself to buy it.  As I flipped to the back and read the ingredients list, I had to sigh and put the frozen meatballs back in the freezer.  I told myself, if I want some meatballs, I just have to make it myself and freeze it!

I chose turkey because I bought a small turkey breast during the Christmas sales.  I removed the turkey bone and hand minced the turkey breast with a cleaver.  Then, just added the seasonings and baked.  Since my turkey breast was small, it didn't yield much meatballs, next time I would have to make more to freeze.  These turkey meatballs were delicious as it.  Or you can add it in spaghetti sauce, or make a BBQ meatballs sauce, or an Asian style sauce to coat the meatballs.  I even sandwiched it in a bun with a slice of cheese for Evy to bring in as her lunchbox to school.

Brined Turkey Breast


Brined turkey breast is definitely the choice for my small family.  But I heard that deep-fried turkey is also very good.  Someone told me if I ever tried a deep-fried turkey, I won't switch back.  Since I don't have a deep-fryer for turkey, brine turkey is sufficient for me.  This turkey doesn't have the turkey smell at all, I am not sure whether it is because it only has white meat or because I added ginger into the brine and also lemon slices into the cavity before roasting?   Anyway, since whatever I did this time worked, I will keep doing it.


Moist and juicy carved turkey breast.  This time I carved it the American way instead of the Asian way.  Haha...  You can see my Asian carving under Turkey posts.

Thanksgiving Meal for 2-4 persons


Everything made from scratch except the pumpkin pie which I bought at Sprouts.  This was about 5 lb. worth of turkey breast and it is good for 2-4 persons (4-6 persons in our case).  Cranberries sauce for my girls and cranberries salsa for me.  Creamy mashed potatoes top with melted Kerrygold butter and chopped scallions.  My banana oats buns and easy crunchy green beans.  Turkey gravy, short-cut method (turkey dripping, chicken stock and thicken with potato starch).

My First Roasted BrineTurkey!


This is an old post way back on New Year day. I have been here for so many years but I never did my own turkey.  I guess the pure size of it turned me off.  With a small family, the idea of roasting a turkey never cross my mind, until I tasted a brine turkey at Lily's house.  Ever since then, I always wanted to brine a turkey.  My chance came when the turkey was on sales on Thanksgiving week.  I managed to find the smallest turkey there, about 10lb.  I guess holding the smallest young turkey wasn't that intimidating.  Furthermore, this small turkey fit into my large stock pot used for the brine.


My plate of turkey breasts.  I guess instead of carving the turkey, I sliced it the Chinese way instead.  I had no idea how to carve a turkey, hahaha...  I thought the turkey smell was a bit strong. :-P   But the drumstick, wing and bone made the best soup.  I made a big pot of soup with it and served it with noodle but I forgot to take any picture.

This was an old post but I wanted to show you my first brine turkey.  :-)   I will share the brine recipe that I used in the next page.  Is there a way to get rid of the turkey smell?
