Cream Cheese Milk Loaf


Making the bun that uses the Dough function can be quite time consuming as it usually took more than 3 hours to get it done.  Sometimes it was hard for me to allocate the time as I have to fetch my little one at noon and another one three and half hours later.  I did over proving the buns once.  So, I need to find a loaf recipe that creates softer bread without using the Dough function.  This bread machine loaf is soft with light crust.  I added walnuts, dried cranberries, sunflower seeds and black sesame seeds for the extra nutrients.  You can add any nuts and seeds that you have in your house, it is not limited to what I listed here.  After day two, you can warm it up in the microwave to soften it again.  Enjoy it as it, or with peanut butter or jam.


Ingredients:

  • 150ml milk (I used 1%, again any would do)
  • 2 oz cream cheese (I used reduced fat, but any would do)
  • 1 Tbsp. unsalted butter
  • 3 tsp. cane sugar
  • 1/2 tsp. sea salt
  • 1 1/4 cup bread flour
  • 1/2 cup whole wheat flour
  • 1 tsp. instant yeast
  •  
  • 1/2 cup chopped walnuts
  • 1/4 cup dried cranberries
  • 1 Tbsp. black sesame seeds
  • 2 Tbsp. sunflower seeds

Method:

Follow your bread maker instruction,  add the ingredients accordingly.  Turn it to basic, 1.5lb loaf and light crust.  Turn it on and let it knead until a soft dough is formed.  Then, add in chopped walnuts, dried cranberries, black sesame seeds and sunflower seeds (or any seeds and nuts you desired). 

When it is done, take out the loaf pan and flip it over on a wire rack to let it cool. The bread will fall out when it's cooled.  When cooled, slice with a serrated knife and store in an air-tight container.  If you still have some left after 2 days, you can reheat it in the microwave to soften it up (15 seconds for 1 and 20 seconds for 2 slices).  Enjoy!
