Slow Cooker Whole Chicken


This is one SUPER DUPER easy slow cooker whole chicken recipe.  All you need are two ingredients, one whole chicken and a packet of Emperor Chicken spice mix.  In your slow cooker, add in the washed whole chicken, pour the Emperor Chicken spice mix on top of the chicken and give it a good rub to cover all sides of the chicken.  Put it breast side up and turn it to High for 5 hours.  When the internal temperature register as 180'F, it is done.  Soft and tender that it will be easily tear off with your hand.


A tip I learned from my friend's mom, to prevent the cover from moving, stick a piece of white paper in between the cover and the crock pot as shown.  It prevents the moving and  thus the noise and the sprinkling of water on the countertop.

Slow Cooker Spiced Chicken


I have been using my slow cooker quite often these days because I found it to be such a convenience.  I mostly used it for my Asian style recipes, Chinese herbal chicken tonic soup and Chinese dessert.  Today, I wanted to try it with a western style approach so I used whatever ingredients and herbs that I have in my house.  I loved sage and rosemary as I know these combination would work well together.  I am not disappointed at all as this got two thumbs up from both of my girls.  I served this with white rice and a Chinese style romaine lettuce side dish.

Quinoa Chili


While browsing the coupon website, I came across this recipe.  A chili recipe that uses a slow cooker and quinoa.  As you know, I love love the convenience of a slow cooker so this recipe hit the spot.  Furthermore, I have about 3/4 cup of quinoa left that I wasn't sure what to do with it,  if I use it to substitute rice, it would not be enough, it has to mix with something more substance to make it into a meal.

Hence this recipe is great as I have some canned beans in my pantry, quinoa, onion, chicken breast and spices in my cabinet.  Just put all in a slow cooker and the dinner is ready!  This is just an idea, you can play with your own recipe!

Three Beans Detox Soup


We all know beans are good for us right?  But I have never heard of this combination before until I watched a Taiwanese TV show recently.  She said this three beans detox soup can detox the body.  Since I always have these three beans in my pantry so of course I have to cook it.  Her recipe is without the sugar but I added Chinese brown sugar so that it is more like a dessert soup to us.  My girls both like this kind of Chinese dessert soup, they wallop all the beans including the soup every time I cooked it.

Green bean is cooling so it is not advisable to eat/drink green bean soup during your menstruation.  So, she suggested that during your menstruation, you can cut down on the green beans or even omit it.  Red and black beans are considered neutral so you can eat it all the times.  I always thought red bean is a bit on the heaty side, but I guess I was wrong.  On the side note, green tea is also cooling, so no green tea during menstruation please!

For this to work, you will have to cook until all the beans are broken out and eat it along with the soup.

Tofu Shirataki Noodle Soup


When their daddy was on a business trip, I just wanted something easy to make and good for lunch and dinner.  A big pot of slow cooker chicken stock that I can cook overnight just pop up.  Just so happen that we had some leftover rotisserie chicken breast and some fresh romaine lettuce and mushroom in the refrigerator, the meal was planned.


For dinner, instead of tofu shirataki, we had some whole wheat thin spaghetti as noodle and also par-boiled spinach as the vegetable.

Slow Cooker Spiced Cauliflower


My second dish using a slow cooker (not counting soup and dessert).  While typing this post, I realize that I can actually add garbanzo beans.  Oh well, will sure to remember it the next time I make this.  Just add 1 can of garbanzo beans (drain) into the mixture if you like (to make it a one dish meal).  Since the day I made this was Monday, so it was a meatless Monday dish for us.  I am trying to cook more meatless meal again (need to lose some extra weight!) since I have not been too discipline lately.  We really enjoy this easy vegetarian dish and hope you like it too!

Asian Style Slow Cooker Chicken


I always in search of an easy to cook meal for my family.  Recently fell in love with my 2 quart size slow cooker again after putting it away in a box for years.  I really love the turn it on and leave it conveniences that a slow cooker provides.  Also, the 2 quart size is just nice for a family of four.  I have been using it to cook herbal soups and sweet dessert soup and now venture into making a main dish out of it.  This is my first chicken dish and we all loved it, so don't be fooled by the look of this dish, even I have to admit it doesn't look quite appetizing but it sure tastes delicious.  Good serving it with a bowl of rice!

The benefits of slow cooker are you can use frozen poultry or meat and also you can turn it to low and go to work or do whatever and come home to a meal.  As for me, I like that I don't have to watch the stove when cooking as I will have to fetch my girls from school.  I will make more dishes via slow cooker so stay tuned!

Chinese Watercress Soup


I made this soup occasionally so I thought I had posted the recipe in my blog, but when I went to search for it, I couldn't find it.  Only then I realized I haven't posted the recipe.  So, I shared it here for my record so that next time if my girls want to make it, they would know where to look for the recipe.

The health benefit of watercress is plenty and it has been dated since ancient time.  It is high in calcium, iron, Vitamin C, beta-carotene, folic acid, potassium, phosphorous and rich in fiber, iodine and anti-oxidants.  You can read more about it here.  It is also a cooling food for Chinese.

Black Porridge Dessert


According to the Chinese, black food is a golden food for the kidney.  And taking care of your kidney is very important as it can reverse aging and makes you look vibrant and younger.  A good kidney can erase the sign of aging, black spots and blemishes on your face, and even turn white hair into black hair.  If you maintain a strong healthy kidney, you will have strong bone and bone marrow, articulate, hear well, clear face and jet black hair. Other black foods that need to be noted are black fungus, black mushroom, kelp, seaweed, fermented black beans, black chicken, black lentils, blackberries, black grapes and etc.  Are you impressed?

So, I made a quick and fuss free black porridge for us, using a slow cooker (the idea came from a Chinese source).  I finally found another way to enjoy some black beans besides cooking it in soup.  Since this is sweet, it is enjoy by everyone, even my girls loved it.  Not only this is delicious, fuss free to cook but also extremely healthy.  For the real benefit, it was recommended to have a bowl everyday and you will see result in week 3 +.  I am not sure whether I want to eat it every day though, but probably once a week (good enough for 3 days) as I do cook with black sesame seeds, seaweed, mushroom and black fungus often during the week.


All ingredients can be found at the Asian supermarkets except walnuts.  If you don't see the black slab sugar, feel free to buy the brown slab sugar.  Dried lily bulbs can be found at the herbal aisle in the Asian store.

Ching's Chili


I have been reading the Super Immunity book and bean is one of the high-micronutrient super foods that was advice to consume regularly.  Frankly I don't cook beans often as I often used the green and red beans to make sweet Chinese dessert soup.  Black and Soy beans to boil Chinese soup and that's about it.  The only bean that I used in cooking is garbanzo beans and that was when I cooked the Japanese curry.  So, after reading that book, I wanted to incorporate more beans into our diets.  Since the weather is getting cold here, a warm bowl of chili came into my mind.  And just when I was thinking of that, the organic brand of beans and tomato sauce were on sales for $1 each.  And that just about made up my mind.


This is Ching's Chili, or my chili as I used ground chicken, tri-bean blend, onion, celery, tomato and corn (for more fiber and additional micronutrient intake) and my own way of seasonings.  We all loved it and I am going to head out to buy more of these tri-bean blend and organic tomato sauce while it is still on sales.  Looking forward to more Ching's Chili in these cold weather.  Feedback to me when you give my chili a try yeah!

This tri-bean blend has organic dark red kidney beans, organic pinto beans and organic black beans.  I was just happy to find three different colored beans in a can.   What a great way to get the nutrients from these beans (What a bummer!  The last few trips I went to KS and they were out of this Tri-Bean Blend!!).

I am aware of the resin linings of tin can and more so from the tomato sauce, but what did I do when my organic tomato sauce came in a tin can instead of a glass bottle?  For this, I just pour out the tomato sauce and didn't bother to scratch the can clean or add water to rinse everything out, so there was still a lining of tomato sauce left on the can, that's the best I can do in this case.  Or else, I would have to make my own tomato sauce.  Luckily I don't depend on can food, I get most of my micronutrients from whole natural food.

Snow Fungus Sweet Soup with Lotus Seeds (雪耳莲子糖水)


Sometimes I feel like making some sweet dessert soup for my family.  After reading about how great the black fungus/ wood ear and white snow fungus for our bodies, I decided to cook it more often.  Since black fungus has more health benefits, I cook it quite often in stir-frying dishes.  But I don't want to neglect the snow fungus as it has a beauty benefit that makes one face looking younger just like bird nest.  But bird nest is expensive and not everybody can drink it often, whereas snow fungus is really affordable.  I read that in order to have that beauty benefit, you have to eat it at least three times a week.  I couldn't possibly cook it that often but when I do make it, I am making sure I am cooking a big pot and have at least three bowls of it. :-)

All these ingredients have health benefits, not just the snow fungus so this sweet soup is really nutritious.  For example, goji berries is high in antioxidant and vitamins, red dates/ jujubes nourishes blood and replenishes Qi, lily buds is cooling, reduce heatiness, treats cough and helps with insomnia, lotus seeds improves digestion, removes heatiness and calms the spirit.

I have a question to ask.  Does adding sugar to cook together with the snow fungus making it soft and gelatinous?   For this, I added the sugar in the end and the resulted snow fungus was crunchy.

White Radish Soup


I loved Korean radish and have been buying it to make kimchi, braise chicken Chinese style or Korean style and not forgetting to make soup.  Radish is cooling so eaten best when you feel that your body is heaty or a cough is coming.  Simmering radish with pork said to be reduce fever, stop coughing and prevents gallstone and kidney stone.


I made this soup for my cough that I developed after I came back from Malaysia.  I suffered the worst jet leg ever, couldn't sleep well for the whole week and then started to have sore throat and coughing that prevented me to sleep for another week.  Not cool at all.  My dad said my body didn't want to come back to the U.S. and thus it made me suffered.  ;-D

Pear, Carrot & Onion Soup


Pear is a cooling food and usually in Chinese cooking, they used Asian pear to make tonic soup.  But for me, I find that the Bosc pear resembled Asian pear the closest as it is crunchy, sweet and juicy and I loved to use it as a substitute.  This soup is made without chicken bone/ drumstick/ pork bone so it is a healthier version without the grease.

Since it is a cooling soup, it's suitable for people who feel heaty or have a cough.  As it is good for soothing the lungs.

Nagaimo Mung Bean Dessert


Nagaimo is also called 山药 or 淮山 in Chinese.  It is a type of yam that can be consume raw.  It has long been traditionally used as Chinese medicine and herbology.  They cut it and dried it in pieces for cooking Chinese herbal soup.  It's the white color herb that we called it 淮山.  I just learned that it has other name which is 山药 from my Chinese friends.  I learned this dessert from them as they gave me a container to try.  It was my first time tasting fresh Nagaimo, frankly I didn't like it as they cut it into big chunks.  It was similar to potato in taste but full of potassium, magnesium, zinc, vitamin C, vitamin B1, and more.  It is also low in calories and a high protein tuber.  I saw a Chinese cooking show, where they put cubed and blanched Nagaimo and Pumpkin into heated milk and serve it as breakfast.  Usually you can cook it like what you would normally cook a potato dish.

In this dessert, I diced the Nagaimo into small cubes so that it was easier for me.  Since I cooked it in a slow cooker, some of the Nagaimo was blended into the soup when stirring.  It still have pieces of Nagaimo but quite pleasant since it was not in big chunks.  Definitely a dessert I will be cooking if I buy Nagaimo again.

Red Beans & Black Glutinous Rice Sweet Soup


















This is one delicious sweet soup I discovered by accident.  I was planning to cook some red bean soup with orange peels.  And then I remembered my mom used to add a handful of white glutinous rice with hers.  Some people added some dried longan too.  But I did not want the dried longan in my sweet soup and while trying to take out my shell pasta to cook noodle soup, I spotted my black glutinous rice.  I was thinking why not I used the black glutinous rice instead of white since it was considered to be healthier.  So, I used the black glutinous rice along with my red beans and dried orange peels and set my slow cooker to low and was really surprised at how tasty it was the next day.  It was so delicious that I would cook this way often from now on.

I love to cook red beans and black glutinous rice in my slow cooker overnight, because I will be rewarded with a soft and gluey and delicious sweet soup in the morning, without fail.   I liked mine soupy thus I added a lot more water.

Barley Drink


While blog visiting, noobcook's Lemon Barley Drink post reminded me to make some barley drink for my family. She made her version of barley drink and photographed it beautifully with the added lemon slice. Usually barley drink is fairly easy to make, you can make one with just water, barley and rock sugar. However since I have the sweet dates and sweet winter melons, I decided to add it into my barley drink.


I used slow cooker to make this. I added all the ingredients with the amount of water I like and turned it on High. Should be ready in 4-6 hours. I used 2 Chinese sweet dried dates, about 1 cup dried sweet winter melons, 3/4 cup barley and 3 quarts water. At 5 hours, before turning off the electric, I added yellow rock sugar to taste. If too sweet, add more water until it reaches your desired sweetness. Actually the resulted barley drink is quite sweet, so only little bit of rock sugar is required.

Black Glutinous Rice Dessert (Bubur Pulut Hitam)



This is my black glutinous rice takes three! Yes believe it, my third time making this dessert only. Can you tell how lazy I am? I tried the rice cooker and stove method, I tried straight from the stove method (takes very long to make the rice soft) and my third time was a charm. I used my lazy slow cooker method!

Good Old Bowl of Chili



I decided to make a pot of Chili today. It's non-traditional but very easy to make. I don't have a specific measurement simply because I hate to take out the spoon to measure everything. I used pork slices instead of ground pork/beef. Again too lazy to ground the pork with my cleaver. Why Chili? Because it's freezing cold over here and I'm dreaming of a bowl of hot Chili!



First, I browned the pork in extra virgin olive oil. Dish out and set aside. Then, I add in one chopped yellow onion and 2 cloves of chopped garlic. Brown those in the E.V. olive oil, when brown, I pour in 28oz. of whole tomatoes with juice (break it out) and 15oz. of red beans in Chili, add in the pork slices and some water. The seasonings I used were garlic powder, onion powder, cumin powder, paprika powder, cayenne powder, oregano, parsley, a little cane sugar, salt & pepper to taste. Covered and let it simmer at low heat for 2 hours. Serve with shredded cheese and rice on the side.

Note: Add 2 cans of red beans in Chili or any beans you fancy if you like lots of beans.

Confinement Food - Chicken in DOM Wine



Ingredients:

1 cornish hen
1/2 cup Benedictine DOM
1/4 cup kei chee (medlar seeds)

Method:

Wash and clean cornish hen thoroughly. Add all ingredients into a slowcooker (small size one) and fill the slowcooker half full with hot water. Boil on High for 3 hours. Serve hot!

Note: This soup is quite sweet.

Confinement Drink - Red Date Tea



This is the drink that I had for the whole month instead of water. Other than that I had Milo with milk in the morning and after three weeks cheating with two cups of coffee. :P This tea is simply delicious. I put everything in a slowcooker and let it cooked overnight on low and enjoyed it the next day. I used red dates, black dates, tong sum and dried longan. My slowcooker is the big one so everything I added was based on agaration.
