From the boo boo of my previous post, I created this Chocolate Covered Cornflakes Cookies. This is a yummy cookie. Almost like my chocolate clusters yet a bit different. Since some of the cornflakes cookies that I made early won't stick together, I have resorted to use chocolate to bind them together. I couldn't waste a bowl of fragrant buttery and crispy cornflakes mix. Chocolate is excellent especially in this cold weather (super cold winter here), I don't even have to store it in the refrigerator.
Closer view of the cookies.
My two trays of cornflake cookies, now finished, all in our tummies. :P
Ok, back to the draft on this cornflake cookies, if I failed again, more chocolate one will be created. Even though the chocolate ones are delicious, but this plain one has it own place in our hearts, even my girls who love chocolate wanted to eat this too, Evy said both were good. To me, this is more suitable for warm weather as chocolate will melt if it's warm.

Visited Retno's blog, I found cookies. Now, I'm seeing cookies at your blog. Hmmm wondering this is something to do with Chinese New Year as I saw my fave cookies at the Asian market yesterday
Every year we would get cornflakes cookies as part of the CNY cookie tray. In fact everyone that I know loves eating them .. and why not! It's so full of crunch and other nice stuff in it.
Yumm...delicious,crispy, chocolaty too.
Hahhaa....ya..in California, can leave the chocolate outside at room temp. Whoa, but in S'pore, need to put in fridge. :(
Think choc tastes better in room temp leh....
Thanks Crystal. I did it now is in my draft for final touches. :)
Shindy, just melt some semi-sweet chocolate chips in the microwave and coat it. Haha, super easy. Of course you can use your favorite brand chocolate bar too.
Thanks Sook. It is indeed very delicious, need self-control if not would get fat from eating too much.
Hahaha BBOven, sorry lah. But you tempt me with all your CNY feasts!
Yes yes Baking fiend. :P

Yes yes Indo-Eat, CNY is approaching and we are whipping out cookies. :)
Yes Jo! Indeed yummy, I will create a less sinful version as I found this butter one sinful. :P
Thanks Retno. :)
I agreed Tigerfish, not as hard, just nice. :)
Chocolate covered cornflake clusters have been around for a long time. Simple, simple - you just melt your favorite chocolate and stir in corn flakes. Spoon clumps onto wax paper and let the set. Easy.
:)
ButterYum
Yes ButterYum, thanks for sharing. :)
love these little nibbles. In Singapore weather, they will start to melt and condense instantly :(
hihi.. do u still bake it after coated with choc?
Janice
Hi Janice,
You don't bake it anymore. The choc. will melt. You just coat it with melted chocolate and let it set in the fridge.
