My modified version of Green Bean Cookies adapted from Rose's Kitchen. This is a crunchy and melt in the mouth kind of cookies.
Ingredients:
1 cup butter (2 sticks)
1/2 cup powdered sugar
1/2 tsp. salt
1 1/2 cup all-purpose flour
2 Tbsp. cornflour
3/4 cup green bean flour
1/2 tsp. baking powder
1 egg yolk, for glazing
Method:
1. Cream butter, powdered sugar and salt until creamy.
2. Mix in sifted flours and hand knead until a dough is formed.
3. Pinch a piece of the dough and roll into ball. Finish the rest of the dough. Brush the top of each cookie with the yolk glaze.
4. Bake in preheated 300'F oven for 20 minutes.
~Yield about 90 cookie balls.

Thanks BlurMommy. I don't think we can get this kind of cookie scoop. It's all made by hands. :) Just pinch the same size of dough before you roll it into balls, then it will turned out about the same shape. :)
Andaliman, I guess it's similar to mung bean, as mung bean is skinless and split green bean right?

Sweet Jasmine ah, nevermind lah you can always buy some if you feel like eating certain kind of cookies. I will have a party on Sunday and I already said I will serve my CNY cookies and I also told my mom I want my brother to bring back some of my bakes for her to sample. AND all my cookies are gone liao, most as gift, so I have to bake everything all over again this whole week. Next time I should keep my mouth shut and don't work myself like crazy. LOL! I still want to try the London Almond Cookies leh...perhaps after all this madness is over.

It turned out YUMMY!!! Got a question, though ... my dough was very sticky.
Had to keep adding flour (while I was shaping it). I wonder if I used too much butter (?)

In that case is too much butter. Like you said, just add some flour until a not so sticky dough is formed.

Hi Gina, welcome to my blog. For this kind of cookie, if you cut down on the oil or butter, the cookie might not stick together. It might be crumbly and won't hold together.
