Spice Chicken



I made this spice chicken as a side dish for my nasi lemak (fragrant coconut rice). Because my girls couldn't take the ikan bilis sambal (too spicy for them), so I had to come out with a side dish that they can eat with their nasi lemak. I also saved some fried ikan bilis (anchovy) for them. So, my girls version were hard boiled egg, cucumber slices, spice chicken, crispy anchovies and roasted peanuts. They loved the fragrant coconut rice so I wanted them to
be able to enjoy this dish too.






Ingredients: (Estimated recipe)

  • 2 chicken breast, sliced
(A)
  • 2 tsp. turmeric powder
  • 2 tsp. cumin powder
  • 1/2 tsp. fennel seeds powder
  • 1/2 tsp. lemon grass powder
  • 1 tsp. coriander powder
  • Salt to taste
  • 1 to 2 tsp. sugar
  • Oil ( You can add 1 Tbsp. of oil to keep the chicken breast moist)
(B)
  • A few Kaffir lime leaves

Method:


1. In a bowl, marinate the chicken slices with (A) for few hours.


2. In a heated wok, add in some oil. Stir-fry the chicken for a minute, add in some Kaffir lime leaves, stir-fry until chicken is cooked. Dish out and serve.

  1. you're a good mother!! always accomadate your gals likness and introduce Malaysia food to them! that good for them and you too! when you guys back vacation in Malaysia all of you don't have problem eating local food...if not ABC will ask for pizza and spagetti only!! look at your nasi lemak and curry chicken now make me want to cook some curry chicken for this rainy and cold days!! yummy!!

  2. I never know there is lemon grass powder selling, very interesting.Ya, I also like you, need cook some for so spicy for kids when I cook Nasi Lemak.

  4. Have yet to get my girl to like crispy anchovies. She takes after my hub for some things. She don't even like the taste of kaya! Can u imagine that. So disappointed.

  5. Is this a dry form of curry? Actually with coconut-rice, we don't need lots of gravy to overpower the coconut rice right? This is just perfect!

  7. Haha Les, yup my girls have no problem eating Malaysian food when we were back. Even here, they prefer Asian food. Pizza is a treat for them. I like home cook Asian food, much healthier that food cooked with cream and cheese. :P

    Sonia, yup lemon grass powder, very common.

    Haha Dhanggit, but this is not spicy at all, no chili powder at all. But certainly can add some chili powder to extra kick.

    Cooking Ninja, oh that's too bad, my girls like crispy anchovies because it's crispy and salty. LOL! As for kaya, they do eat it but I hardly make because it's fattening.

    Yup Tigerfish! We don't think the curry gravy to overpower the fragrant of coconut rice so this is a dry curry. :)
