I made this for a party and it was well received. I was thinking instead of the baked cassava kuih that we were used to, I wanted to try a steam version. The steamed version was not bad too and easy to make. You can also make this with gula Melaka/ palm sugar for a different fragrant, color and taste instead of using pandan paste.
Ingredients:
1 packet/ 1 lb./ 16z./ 454gm of grated tapioca/ cassava
3/4 cup white sugar (or palm sugar for different taste and color)
4 Tbsp. tapioca flour
1 1/4 cup coconut milk
1 tsp. pandan paste
Method:
1. Drain the cassava or squeeze dry.
2. In a big bowl, add in all the ingredients, mix well and pour into a greased pan and steam for 25 minutes.
3. Let cool before slicing into pieces.
Kue talam. I love it!

ReplyDeleteThis is the first time I come across a pandan cassava kuih. Usually we have the yellow coloureed kuih. Apart from steaming I think if you baked it also will turn out nice.
ReplyDeleteHmmm...is this the same kind of kuih that comes in pink and yellow as well? I forgot its name but I remember eating those round kuihs (more like the shape of cupcake) when I was younger and they come in different colors - pandan green, pink and sometimes yellow!

I would like to take it a step further and since I will be moving into my own place with hubby & son, I thot of investing in a decent oven. I intend to enrol for baking classes too once I settle into the new place.

Thanks daphne. I don't think kuih is healthy because most Malay kuih are made of coconut milk. Unless we eat the Chinese kuih. :P

I would get a convection oven (the one with fan) as it makes great roasting and even baking for cookies. Also get the one with the broil (top heating element) to broil food or crisp the top layer/ crisp up chicken skin/ melt cheese (just handy to have). Conventional oven does better in making cakes then the convection. So, hopefully you can get a convection oven that can also bake without turning on the fan (perform like a conventional oven) and with broil. Oh, the oven here all up to 500'F. Hope I help!

Nice kuih, looks delicious, how do you like. I love both Kuih Talam and cassava cake too thinking to making kuid talam for a while but but hubby not a fan of kuih ( maybe because he is not malaysia, so not use to hose kuih muih stuff :)) Thanks for sharing.. definitely want to try it one day!
