Cornflakes Cookies



I finally test out this cookie by baking a batch since this is one of the cookies I wanted to make for CNY. Glad to say I like it and it's so easy to make too. I used the small cookie scoop to scoop the cookies and hence the even shape. This way I don't even have to dirty my hands.





I adapted the recipe from Gina (Cuisine Asia) and did some slight modification.

Ingredients:

(A)
120ml canola oil
1 large egg
1 tsp. Pure vanilla extract
1/4 cup + 1/8 cup sugar

(B)
1 1/4 cup self-raising flour
1 1/2 cup cornflakes

Method:

1. Mix (A) in a bowl. Add in (B). Mix well with a spatula. Some cornflakes will crush when mixing.

2. Use a small cookie scoop and scoop cookie dough and place on baking sheet lined with parchment paper.

3. Bake at preheated 350'F oven for 15-17 minutes. Or baked in preheated 325'F convection oven for 13-15 minutes.

4. Let cool in pan for 5 minutes before transferring it to cool completely on a wire rack. Store in air-tight container.


~Yield about 32-35 with cookie scoop.

Edited to add: You should bake the cookie dough inside the paper cup so that the dough will expand to fit the paper cup while baking.

  2. looks cute & delicious. may i know why the recipe asks for 1/4 cup + 1/8 cup of sugar and totalled up say, 2/3 cup of sugar, for example?

    This is a crispy and crunchy cookies and not too sweet.

    Because the total is 3/8 cup of sugar, isn't that harder to measure? Every measuring cups come with 1/4 cup, so you just scoop 1/4 cup and then half of 1/4 cup to get 1/8 cup, is that simple. I'm just trying to simplifying it you, man!

  5. Cornflakes cookies...sound good!.I like your cookies photo I never make any cornflakes meal or cookies b4..Nobody really eat cornflakes at home.Usually,I bought a box for hubby,and after months have to throw away..now i know what to do!!

  7. I might try this recipe. Is this the same base recipe that you use for your oats cookies? I do that kind of measurement too - 1/4 + 1/8cup. Hehe. It's easier.

    You're welcome Anon. I used Canola oil because it is a neutral oil, very low in saturated fat and high in monounsaturated and zero trans fat. But I guess sunflower oil is very mild and almost neutral so yes you can substitute with this.

    You should be able to buy vanilla extract in M'sia, if you cannot find it in the supermarket, try baking supply stores. Vanilla extract is a solution containing the flavor coumpound vanillin which is extracted from vanilla beans. It mades the cookie smells fragrant.

    For this, you can use 80g up to
    90g of sugar. Depends on how sweet you want it.

    350'F = 175'C.

    Yes, you can use vegetable oil.

    I tried the cookies, but it doesnt turn out gd.
    I have used vanilla essence instead of vanilla extract, will there be any difference?
    And its was in a darker brown colour type.
    Will try again.

    I always use 100% Pure vanilla extract, it does makes a different. The cookies really smell great with Pure vanilla extract. Darker brown color means you overbaked it. Maybe try baking it 4-5 mins less.

    this is the anon asking about the melted butter....
    i just baked a tray and it looked just like yours only of course hehehe the cupcake is red.... and top of each cookie with a pinch of shredded cheddar cheese

    S.O.S ...

    i baked @ 160C for 14 mins (convention oven) and the shredded cheese looks brownies n cooked ....
    but i am worried whether the cookies can last till cny?
    else the next batch i will make them without the cheese ....

  38. Anon, cheese melt really fast, so I would probably add it in at the last few minutes to bake. I really don't know how long this will keep, with cheese better be careful.

    Tried out this cookie recipe. Do you have any idea why the cornflakes turned a bit hard? The cookies portion was crunchy, but the cornflakes became hard to chew.

  41. Anon, I'm not sure because I don't have this problem. I made some last week and I just tried one and the cornflakes was not hard to chew at all. Perhaps you can try other brand of cornflakes and see what happen.

    I've tried this last night.. but its not fragrant. I used vanilla extract though they never say its 100% - it stated with alcohol content. Is this the one ?

    I also find it abit hard and its not crispy - and quite oily too - I used canola oil.

    My Pure vanilla extract has 35% alcohol. If you want it to be more fragrant, use melted butter.

    Not sure why yours is hard and not crispy though. Mine is oily when baking, the oil came out from the cookies while baking. But not afterward though.

  45. I tried the recipe today. Baked at 350C for 17mins. The inner part of the cookies seemed like not completely dry but the outer already getting brown and crunchy. Do you have any idea what goes wrong or how should I improve it? I am baking for the first time though. Thanks

    Hmm...perhaps your cookie is too thick? Try to flatten it a bit next time so that, it will bake more evenly, like inside is cooked and outside is not too brown.

  48. just bake a batch of cornflakes cookies. the cornflake is a bit chewy. i used kellog's cornflake, not sure other brand works well or not but let me finish this box first :)

    well, the inside of the cookies is a bit like cake, don't know what happened. maybe should try to eat again tomorrow, see if it turns out like a real cookie.

    by the way, if i used melted butter, is it still the same measurement as the oil? i used olive oil this time.

    Not sure why your cornflake is chewy and it shouldn't taste like cake. Maybe you can try to bake it again if the next day still tasted like cake.

    And yes, use the same measurement of melted butter as the oil.
