Kimchi Fried Rice Easy Version

I just made a new batch of kimchi and with a new batch of kimchi and some leftover rice, I couldn't help myself but to whip up some delectable kimchi fried rice!

This is an easy version because it has no Gochujang (Korean chili paste) in it because my gochujang turned to a rock paste in the refrigerator!  I must have left it for a long time for the paste to turn into a rock huh?  Guess I haven't been making any Korean food since last year because of some personal issue. Anyway, in the trash it went and this version is purely using the juices from the kimchi, more probiotic huh?  Haha...

Ingredients:

2 eggs, beaten and season with soy sauce and white pepper
1 Tbsp. minced raspberry vinegar pickled ginger
4 cloves of garlic, minced
3 natural turkey deli lunch meat, cut into small pieces
Homemade kimchi to your liking
Overnight rice (mine was turmeric coconut rice)
Toasted sesame seeds

Methods:

1.  Heat up your wok, when heated, add in some peanut oil.  Add in beaten eggs and stir-fry until cooked.  Dish out and set aside.

2.  In the same wok, add in more oil if needed.  Add in ginger and garlic, fry until fragrant.  Add in turkey deli meat and fry well.  Add in kimchi (whatever you want) and stir-fry well.  Then, add in rice and mix well.

3.  Season with fish sauce, sea salt, a touch of sugar and some sesame oil.  Turn off heat and add in some toasted sesame seeds and enjoy!

  1. Great to have your kimchi made at home! I depend on store-bought kimchi and make fried rice with it quite often. I usually do not add gojuchang to kimchi fried rice as the kimchi is already very flavorful.

Have a great week Ching :)
