No-bake granola bars!! Who wouldn't love it? When I saw this easy no-bake granola bars, I just had to try it. A healthy more natural piece of granola bar is selling for $1.80 or more in a grocery store. That was pricey if you asked me. With this easy recipe, you can make a batch and grab one on the go or as a snack, nothing beat homemade. This would make a healthy school snack for my girls in the coming school year too.
These granola bars are delicious. Soft and chewy with the taste of peanut butter and all the goodies I put in there. I added chocolate chips because my girls loved it, but you can certainly omit it.
Spread it out on a foil lined baking sheet and refrigerate.
Recipe adapted from FOOD 52 with some changes.
Ingredients:
(A)
2/3 cup creamy peanut butter
1/2 cup pure honey
1/8 tsp. rock salt (or sea salt)
(B)
2 1/2 cups rolled oats
1/2 cup raw sunflower seeds
1/2 cup broken cashew nuts
1/2 cup dried cranberries
1/4 cup semi-sweet chocolate chips
2 Tbsp. chia seeds
Mix together in a bowl
Method:
1. In a big bowl. Add in (A). Whisk until combined.
2. Add in (B), stir with a spatula until everything is sticky and mixed well. If it's too dry, add more honey.
3. Line a baking dish with alum. foil. Pour content on it and shape and press well into the baking dish. [I sprinkled some chia seeds on top at this stage, but it's optional.] Refrigerate for 4 hours. Cut into bar, wrap with cling wrap, put into an air-tight container and keep refrigerated until ready to use.
*These bars will last for 2 weeks in the fridge. However, I don't think it would last this long in my house as it was simply delicious!!*
Looks wonderful! I will have to try it out for myself :) Yum!

Wow, it looks good! The cashew nuts you put are they raw as well?
ReplyDeleteHi Phong Hong, there were roasted cashew nuts.
ReplyDeleteI love baking my own bars too! And you are right. Far better and less sugar too.
ReplyDeleteHi, I'm looking for a low fat bar, what can I substitute the peanut butter and honey with? Thks.
ReplyDeleteHi Eunice,
ReplyDeleteYou can omit the peanut butter since the fat is in the peanut butter. I think you still need honey to bind it together though.
