With the start of a new school year I have to prepare healthy snack for Evy to bring to school. Luckily her kindergarten is only half day so I only have to worry about her snack for now. Her school stresses on healthy snack and no soda for kids which I like. I made this cookies for her to bring to school. It has honey, raisin, dried cranberries, walnuts and oats (like ingredients for Granola) and I mixed it all and made it into cookies. My kids seem to enjoy cookies more instead of granola alone. So, this is a great choice for them.
~Yields 32 cookies

- 1 egg, beaten
- 125ml canola oil
- 1 tsp. vanilla extract
- 1/4 cup sugar
- 1/8 cup honey
(B)
- 1 1/4 cup self-raising/rising flour
- 1/2 cup old fashioned rolled oats
- 1/2 cup dried cranberries
- 1/2 cup raisins
1/4 cup chopped walnuts
Method:
1. Put (A) into a bowl. Whisk well. Add in (B). Mix well with a spatula.
2. Use a small cookie scoop and scoop into balls. Place on baking sheet lined with parchment paper 1.5 inch apart.
3. Bake at preheated 350'F oven for 15 minutes. Or baked in preheated 325'F convection oven for 13 minutes.
4. Let cool in pan for 5 minutes before transferring it to cool completely on a wire rack. Store in an air-tight container.

ReplyDeleteoooh ... yummy. I tried a kiddy recipe with little V but I didn't have any oats, so I replace it with flour and it turned out pretty good as well. :)

ReplyDeleteI am surprised that kinder/schools in USA do not practise a NUT-FREE policy with so many kids having nut allergies these days.
As a Mom with a child allergic to nuts it is easy to ensure that my child's snack/lunch box is nut free but what about other kids' food brought from home ? Hence schools in Australia have a NUT-FREE zone policy, and parents are advised not to include any food that contains nuts.

Her school does practice a Nut-Free table in the cafeteria for peanut allergy kids and also no sharing of food. If for the birthday treat that meant for sharing, then it has to be nut free. I am sure parents of child with nuts allergy will tell their kids to eat their own food and don't take food from others right? I told Evy not to share her food too. I don't give her extra to share anyway, I only give her one cookie for snack. The teacher tells everyone in the classroom who has peanut allergy and watch them eat their own snacks. I guess it's quite unfair that normal kids can't enjoy their nuts (which is good for them) because of a few. If we all practice the no sharing of food, special eating table for allergy kids, it should be safe. Just make sure you remind your kid every day not to eat other food not in his lunch box.

Gert, I know lah. I especially also look for those that has no partially-hydrogenated oil in the ingredients list. About 80% zero trans fat products have this oil in the ingredients list. So, the choices I have is really limited. A lot of cereals have this partially-hydrogenated oil too. :(
