Banana Pineapple Cake

Banana and pineapple pair well together and I simply adore banana pineapple cake. I happen to have some leftover crushed pineapple and some banana at home so what a great way to use up my crushed pineapple and make this delicious cake. This cake would be our breakfast and afternoon snack. :)

Ingredients:
  • 1 stick + 6 Tbsp. butter, soften
  • 3/4 cup sugar
  • 2 large eggs
  • 2 cups cake flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1 big banana, mashed
  • 8 ounce crushed pineapple, drained
  • 1/4 cup whole milk
  • 1/2 tsp. banana essence

Method:

1. Cream butter and sugar until light and creamy with an electric mixer.

2. Pour in eggs, one at a time and beat until creamy.

3. Add in milk, mashed banana, crushed pineapple and banana essence and mix well.

4. Add in cake flour, baking powder and baking soda and beat until combined.

5. Pour into a greased and floured bundt pan and bake in preheated 350'F oven for 35-37 minutes.

  1. Hi there, I've been following your blog and tried few of your recipes. They worked out very well and my family loves them. Very simple and easy methods. However, I baked a cake today ( urh..urh..guilty and honestly..I have a problem here and I need your opinion)no, no..not from your recipes one, but hope you can give me a little advice) I bake a cake exactly like yours today. Looks exactly too. Recipe almost the same as yours too, but..but..Mine has lots of crumbs bits on the plate and when I cut it, the crumbs looked very messy. Yours look very neat. Can you tell me what's wrong? My first time baking though. Is it too much time spent on the whipping? Too much flour? Too much butter or oil?

    Thank you for reading ;-)

  2. I hope I can use vanilla extract instead of banana essence. Do you think it'll make a big difference? This combo sounds delicious. Thanks for the recipe

  11. Hi,
    Awesome blog!(= Love your recipes.

Just want to ask, how many grams of shortening to replace a 250 grams of butter? Also, can shortening be used to replace butter for the cake recipes?

By the way, your Steamed banana cupcakes recipe, can it be oven baked instead of steaming? Will the outcome of the cake be different?

    Thanks.(= Take care!

  12. Hi Danielle,
I wish I can help you but I have no idea too. Perhaps you can do a search on Google and see what you can find out. Sorry! P/S: Glad to know you have tried my recipes. :)

    Hi Mrs. JP,
Yes you can, it won't make any difference in cake texture. But not sure whether the cake will smell more like pineapple or banana in the end.

Thanks Pearl. :) Easy to make too!

    Thanks Jennifer.

Thanks motorhome. Hope you like this cake too, it's one of my favorites. Drizzle some icing on top if it's not sweet enough for you. :) The cake we made normally on the less sweet end.

    Thanks BBOven. Welcome back!

Haha SIG, sorry lah! I like this type of banana cake too. Go bake!

Emile Zola, this cake is not sweet, just nice. Actually I would prefer it to be sweeter (I have sweet tooth I think), but my hubby said it's just nice. For 2 cups of flour, only used 3/4 cup of sugar, it won't be too sweet. But, for those who like it sweeter, can use 1 cup of sugar.

Thanks Grace. Glad to know the sugee cookies were a success! I wasn't sure because the texture of this cookies is so Asian that it might be alien to some. :P

    Thanks noobcook.

    Thanks pigpigs.

    Thanks Anon,
You can replace with the same amount, but why do you want to replace butter with shortening? As far as I know, shortening has trans fat in it even with the one it said zero trans fat (check to see whether there is any partially hydrogenated oil used in the ingredients list).

And why do you want to use a steamed banana cake recipe to bake? There is one baked banana cake recipe that is very good (with link to the recipe) in my blog you can try. I never try baking my steamed banana cake, but you sure can try, I don't know about the outcome though.

  19. Hi There,

I am eager to try your recipe of banana pineapple cake, I am just a little confused how much is 1 stick butter + 6 tbsp. I live in India and couldn't follow the measure, it would great if you could help me with that one. Thankyou, Kanupriya

  20. Hi K,

    1 stick of butter = 1/2 cup = 8 Tbsp. = 113g.

    So, 6 Tbsp. = 113 g / 6. I will let you do the math. ;)
