BBQ Ribs
My experiment with oven BBQ ribs:
Cut the slab into half and rub it with spice rub. Put it in the disposable aluminum tin and let it marinate for at least 2 hours in the refrigerator, covered.
Then, bake in 300'F oven covered with foil for 3 hours. After that, take it out and spread it with your favorite BBQ sauce and bake uncovered for an additional 1 hour. When done, broil in 500'F oven for 5 minutes. Spread the top of the ribs with additional BBQ sauce or dripping from the pan before serving.
Verdict: Surprisingly tender and moist, but not fall off the bone soft.
Spice Rub Recipe from Test Kitchen:
1 Tbsp + 1/2 tsp. paprika
1 1/2 tsp. chili powder
1 3/4 tsp. cumin
1 1/2 tsp. brown sugar
1 1/2 tsp. kosher salt
3/4 tsp. dried oregano
3/4 tsp. black pepper
1 tsp. white pepper
1/2 tsp. cayenne

I did that last week when I had a BBQ party. It came out really nice ... fall of the bone yummy!!
I usually do my ribs on the grill, but I love the looks of your baby backs.

ReplyDeleteI have a rough draft on BBQ ribs. My neighbors were asking me secret recipe for my ribs. I was going post my secret recipe. It only takes 10 minutes total under the broiler, 5 minutes on each side.

Thanks. Kosher salt grain is larger than table salt grain. So, to replace it with table salt, use 1 tsp. instead.

ReplyDeleteI'm thinking soaking and cooking the ribs in beer for hours will surely make the ribs very soft. The beer will add extra fragrant and flavor to the ribs as well (like beer brats). Guess it goes the same with cola, but I prefer beer. Hehe..
I also do mine on the grill but will have to try it this way next time. It looks yummy!

It's considered short-cut already. :) People grill it the whole day to get the fall off the bone texture.
Another short-cut is to brine it for an hour and then grill for 4 hours on the grill. Still take 4 hours though. :)

Thanks! Marinate in the morning, put it in the oven after lunch and your dinner will be ready in 4 hours. ;)
Hello, Little Corner, all your tips and Tricia's worked like a dream. In fact, I marinated the pork-on-bone chops (couldn't buy spare ribs) with seasoning, herbs and some cola drink (didn't want to open a bottle of beer; no one here to drink the rest of it).
ReplyDeleteOnly slowbaked the meat for 2 hours, basting in between. Then quick-grilled it for 5 minutes with a sprinkling of sugar (honey would be better perhaps) - voila! - it was fall-off-the-bone tender. Thanks so much, ladies. ^_^
