Stir-fried Spaghetti with Mushroom, Eggs and Flower Chives



How this dish came about was I couldn't resist purchasing the organic brown mushroom that was on Manager Special at King Sooper.  I still have half a bunch of flower chives that was given by a friend and some organic brown eggs in the refrigerator, so this dish was set.  Eating too much carbohydrate has gotten me fat but sometimes I just craved for this easy one dish meal.  It was filling and it took less time to make.  However, I realized that I couldn't eat too much carb. few days in a roll, I really put on weight as a result.  So, right now I would stick to as little carb as possible and consume more vegetable and some protein.  And if I can control no snacking in the afternoon that would be great but I love my cookies!!  :(

Okay, enough ranting about my weight issue and scroll down for the recipe!




Ingredients:

1/2 a box of ( about 8oz) spaghetti, cooked and drained.  Drizzle some olive oil and mixed well, set aside.
3 eggs, beaten and seasoned with soy sauce and white pepper
A small bunch of flower chives, washed and cut
3 cloves of garlic, diced
8 brown mushroom, rinsed/wiped clean and sliced
Seasoning: oyster sauce, soy sauce, brown sugar, black pepper and sesame oil

Methods:

1.  Heat up a skillet.  When heated, add in some olive oil.  Add in the beaten eggs and stir-fry until cooked, dish out and set aside.

2.  In the heated skillet, add in more olive oil.  Add in the mushroom and garlic, sauteed until mushroom was soften.  Add in the flower chives, sauteed well.  

3.  Add in the spaghetti, mixed well and add the above seasonings and eggs.  Mixed well and season to taste.  Enjoy!

This dish looks healthy with the combination of Mushroom, Eggs & Chives. This was pretty organized, but it would be better with some handy tips,,,Thanks for your work...

I have also attempted "easternizing" Italian spaghetti noodles by stir-frying it with oyster sauce. I like how you combine foreign-originated food like topokki or spaghetti with local seasoning and cooking style. My friends and family do not twist recipe this way and find it odd, haha.
