Chicken Curry with Sweet Potatoes


I don't buy potato unless it is on special occasion and organic.  To me is why eat potato when you can eat the superfood sweet potato?  In the Asian supermarket, we can buy all sort of different colors sweet potatoes, from purple, yellow to orange.  I like to buy the purple variety because not a lot of time we get to eat purple color food.  But for adding to curry, yellow and orange colors sweet potato is preferred.

I was planning to make a pot of curry chicken and just so happen that I had some sweet potatoes that were starting to sprout so of course I had to eat it quickly.  Thus, this idea was born.  I loved it a lot because it added an extra sweetness to the curry.  Next time if you have a choice, always pick the superfood!



I used one packet of Delimas curry paste, 6 skinless and boneless chicken thighs, 1 big sweet potato, 1 yellow onion and 1 big red bell pepper.  Cook as packet direction.  Enjoy!

I also hardly buy potatoes but sometimes it really depends on the dish. Some people will think that curry with a little sweetness is a no-no (not authentic) but to me, it is acceptable e.g if I want some Japanese curry, I would think replacing potatoes with sweet potatoes will be perfectly fine. So it just depends.

This sounds like a wonderful soup to warm up...when the weather gets cooler. I love curry and this lovely color added to the soup.

You meant sweet potato is better than potato? I thougt both they are equally good. You use store bought curry paste to cook this curry , very quick huh.

I always love a curry and it just isn't complete without the potatoes. I agree that sweet potatoes are the better alternative.

I prefer nutrition dense sweet potato to the potatoes too. Curry is a good choice to use sweet potato I think.

I have never put sweet potatoes in curry but I think it will totally work. Got to try it next time I cook curry :)
