Stir-fried Chinese Long Beans with Chicken


You can buy the Chinese long beans at the Asian supermarket.  I don't think you would miss it because it is long and green.  If the long beans look fresh and green, I would buy it.  In Malaysia, we love to fry it with sambal belacan (chili paste) and make it into a spicy dish.  However, since I have some leftover grilled chicken breast, I decided to make a non-spicy dish out of it.  You need to fry it in oil so that it will be crunchy and crisp and delicious.  These long beans are good in fried eggs too where we chopped the long bean into small cubes.  I think I have that recipe in my blog from years back.



Ingredients:

Chinese long beans, cut/ snap into 2 inches length, washed and rinsed with water
1 Tbsp. minced ginger
3 cloves of garlic, minced
Cooked grilled chicken, cut into small cubes (or leftover rotisserie chicken)
Oyster sauce to taste

Method:

1.  Heat up your wok, when hot, add in cooking oil of your choice.  When the oil is hot but not smoking, add in the minced ginger, stir-fry until fragrant.  Add in garlic and stir-fry until slightly golden.  Add in long beans and stir-fry well.  Stir-frying it in hot oil will give you a crunchy and crisp long beans with beautiful green color.

2.  Add in the chicken, stir-fry well.  Season to taste with oyster sauce.  Add a little water if need to.

3.  Serve hot!

Chinese long beans usually reminds me of the "Four Seasons Beans" dish :). Sometimes French beans are used and sometimes long beans. I like both of them. I also bought Chinese long beans quite recently from the Asian supermarket and cooked them with tempeh.

I love long beans! I usually fry it with dried prawns. Also love to add it to fried rice.
