Cream Cheese Pound Cake



Awesomely delicious!

Ingredients:

1/2 cup (1 stick) butter, softened
3/4 cup sugar
1/2 pkg. (4 oz) Philadelphia cream cheese, softened
3 eggs
1 tsp. pure vanilla extract
1 cup flour (all purpose, unbleached)
1/2 Tbp. baking powder
1/2 tsp. salt

Method:

1. Preheat oven to 350ºF. Beat butter in large bowl with electric mixer on medium speed 1 min. Gradually add sugar, beating well after each addition, until very light and fluffy. Add cream cheese; beat 1 min. Add eggs, one at a time, beating well after each addition. Add vanilla extract, beat to mix.

2. Combine flour, baking powder and salt. Add to butter mixture. Beat 1 min or until well blended. Pour batter into greased and floured 8 1/2 x 3 1/2 loaf pan and bake for 40 minutes. Stick with toothpick to check for doneness.

The texture looks great - fluffy and light! I've never made a pound cake before, not sure if I've ever had one actually. I might start off with ur green tea version first!

OMG! i can't imagine wat kind of sparkling it would be when butter meets cream cheese!! but it is certainly creamy, moist and delicious! sure i will try:) lets get my cream cheese ready 1st in the 1st place.

If you don't mind when you got the time could you kindly advise me on
1/2 cup (1 stick) butter = to how many grams, 1/2 pkg. (4 oz) Philadelphia cream cheese = to how many grams and do you bake the cake using 350ºF. Is 350ºF equal to 180C?

Thanks Gigi. Yes, you should try this, it's soooo good. Yeah I baked some CNY cookies already, going to make my kuih bangkit this afternoon. Someone organized a gathering at her house so we just attend. :) No decoration this year, no mood at all. :P

1 stick of butter = 113g
4 oz of cream cheese = 113.5g
And yes 350'F = 180'C.

cheese pound cake? first time i heard of it and it sure looks good..btw, me failed in making the seaweed rolls after everything =( the seaweed and spring roll sking still separates..and float around..hahaha looks like an oil-ocean..

btw, gong xi fa cai to you and family..i still haven't spring clean my house because i'm so stuck in all this baking blogs..OMG!!

I tried making the pound cake last night. Overall it taste very good but I got one question to ask. Why is the bottom of my cake a bit wet whereas the top is fine fluffy and light?

I tried baking this pound cake last night. Turn out very good but the botton of the pound cake a bit wet.

Can I ask why this is so? And another question. I am using a table top oven so when I bake I used the grill as well as the botton heater. Is this correct way to bake the cake?

Pooh Shim,
Bottom a little wet seem like too much butter, try cut it down 1 Tbsp. and see what happen. Normally for baking cake, it's best to use the top heating element only (conventional oven). But I'm not sure this will cause your cake to be wet at the bottom though.
