Green Tea Yogurt Cupcakes/Muffins



Looks like I am addicted in baking yogurt cake right? Actually it is also I bought a big tub of plain yogurt so I have to finish it. This time I tried adding green tea powder into the yogurt cake. This cake has a slight fragrant of green tea and not too sweet.

Ingredients:

(A)
1 1/2 cup all purpose flour
2 tsp. baking powder
1/4 tsp. salt
1 cup sugar
1 tsp. green tea powder
(B)
1 cup plain yogurt
3 large eggs, whisk
1 tsp. vanilla extract
1/2 cup canola oil


Method:

1. Preheat oven to 350'F. Place paper cups in the muffin pan.

2. In a big bowl, add in (A). Whisk to combine.


3. Then, add in (B). Whisk and blend until incorporated.


4. Lastly, scoop the batter into each papercups until 3/4 full.


5. Bake for 25 minutes or until toothpick inserted in center comes out clean. Cool on wire rack.


*For the paper cups above, it yields 17 cupcakes for me*

wow, i have always wanted to try this combination ie green tea with yogurt but dare not because not sure how it will turn out but now, i will certainly go ahead! but before that, would like to ask, should the batter be smooth or with lumps after mixing? and the mixing is done by hand? thks

Gigi, actually more work than cake because you have to scoop it into individual cup. Just that you save on the baking time by more than half. Also easier to eat, don't have to cut it with knife. :)

The batter is smooth, no lumps. I actually like this more than the Pandan one. :)

Beachlover, in your case, bake it only if you are going to a potluck. You can try some and others will finish it for you. :)

Gert, hmmm...like that a bit difficult hor. Surprisingly my hubby didn't touch the green tea and chocolate ones but ate a lot of green tea one. Ok Gert, will visit your other blog for your meme.

I don't have a muffin tray, but I have both a loaf pan and a pie pan.

Do you think it might turn out well as a loaf? While baking it longer, obviously

Yes Lee, you can bake it in a loaf pan for 50 minutes. My dark chocolate yogurt cake was baked in a loaf pan. :)

Yes food for tots, give it a try. Since there is no butter used in this recipe, it doesn't have the fragrant of a butter cake. But it's a lot more healthy and delicious in it's own way. :)
